Low Carb Chicken Stir Fry Recipe
Broccoli doesn’t find it’s way into my groceries nearly as often as it should. Every time I cook with broccoli, I remember how much I enjoy it and promise myself to include it in my weekly menu more often.
This Chicken Stir Fry Recipe is one of ways I’ve been enjoying broccoli lately. It’s easy to prepare, is low carb friendly and best of all – tastes delicious!
I use chicken thighs (rather than breasts) in this recipe because the end dish has a higher fat content (important when you’re following a low carb, high fat diet). Plus, the chicken is so much juicer.
Keto Chicken Stir Fry Recipe
- 1 Tablespoon Sesame Oil
- 500g/1.1 lbs Chicken Thighs, Diced
- 3 Garlic Cloves, Peeled and Diced
- Salt & Pepper, to taste
- 1 Head of Broccoli, Chopped into bite sized pieces
- 2 Tablespoons Tamari
- Heat the sesame oil in a large frying pan.
- When hot, add the chicken thighs, garlic, salt and pepper to taste.
- Once the chicken starts browning add the broccoli and tamari.
- Stir to combine.
- Cook until the broccoli has softened, chicken browned and fully cooked through.
- Serve as is or with zuccini or cabbage noodles.
