Mascarpone Scrambled Eggs

Mascarpone cheese is one of my favourite low carb ingredients. It’s such a dream to work with and the resulting dishes are always so luxurious and delicious. (Like this Mascarpone Chocolate Mousse.)

I have NO idea why I didn’t think to mix a portion through scrambled eggs instead of cream. But, better now than never! The scrambled eggs are just so creamy and fluffy that I don’t think I’ll be able to go back to making them with cream again.

Mascarpone Scrambled Eggs Recipe

  • 5 Eggs
  • 1/2 Cup Mascarpone Cheese
  • Butter or Coconut Oil, for frying
  1. Whisk together the eggs and Mascarpone until smooth.
  2. Heat butter or coconut oil in a large frying pan.
  3. When hot, pour in the scrambled egg mixture.
  4. Cook, stirring frequently, until done to your liking.
  5. Serve and enjoy!
