Low Carb Cauliflower Casserole

Today I’m sharing a super easy low carb cauliflower casserole which is so cheesy and tastes somewhere between a potato gratin and mac and cheese. But, it’s low carb and keto diet friendly.

4 Ingredient Easy Cheesy Low Carb Cauliflower Casserole Recipe & Video

This recipe has been kept simple with just 4 ingredients. Feel free to add to it though with ingredients to taste. Here are some ideas:

  • Vegetables – chopped and sauteed garlic, broccoli or mushrooms
  • Meat – chopped salami, bacon or ham
  • Seasoning – salt, pepper, garlic, mustard
  • Cheese – cream cheese, feta, parmesan

Low Carb Cauliflower Casserole Recipe

  • 1 Head of Cauliflower, chopped into bite sized pieces
  • 1/2 Cup Sour Cream
  • 1/2 Cup Cream
  • 1 Cup Grated Cheese
  1. Preheat the oven to 180C/350F and get out an oven proof dish.
  2. Bring a pot of water up to the boil and cook the cauliflower for 5 minutes.
  3. Once cooked, drain the cauliflower and place into the oven proof dish.
  4. Pour over the sour cream and cream.
  5. Stir to combine.
  6. Mix through 1/2 cup of grated cheese.
  7. Top with the other 1/2 cup of grated cheese.
  8. Place into the preheated oven for 15-20 minutes, or until cooked through and golden.

Easy Low Carb & Keto Diet Dinner Idea - 4 Ingredient Cheesy Cauliflower Casserole.

Ingredients

  • 1 Head of Cauliflower, chopped into bite sized pieces
  • 1/2 Cup Sour Cream
  • 1/2 Cup Cream
  • 1 Cup Grated Cheese

Instructions
