Keto Breakfast Meal Prep Ideas

Some days there’s time for slow, lazy breakfasts and other you barely have time to open the fridge, let alone think about actually making breakfast.

For those times, a bit of planning and keto breakfast meal prep comes in handy. Here’s what I do in advance, to prep a few breakfasts in bulk.

 

I like to store my breakfasts in meal prep containers which stack easily in my fridge and keep the elements separate until needed.

Scrambled Eggs

Whisk together 4-6 eggs and cream, melt butter in a large frying pan and cook the eggs until done to your liking. Allow to cool then pop into your meal prep containers.

Feel free to make your eggs of choice, hard boiled would work really well too. I find that scrambled eggs keep and reheat really well, so I go for those most often.

Vegetables

Broccoli and mushrooms in breakfast meal prep containers

Heat butter in a frying pan and cook your vegetables of choice until softened. This can take a while depending on the vegetables you choose. In this instance I chose broccoli and mushrooms, but feel free to switch it up and cook your favourite keto friendly vegetable/s.

I reckon I’d get quite hangry (hungry/angry) waiting for the broccoli to cook if it was freshly cooked for breakfast, so this is a pretty smart move, I reckon!

Meat

You could fry up sausages or bacon for a meaty inclusion, or make it easy and chop some salami to pop into your breakfast meal prep containers. You could fry the salami until crispy if you like, or have them chopped and ready to quickly fry up when you enjoy the breakfast. So many options!

Reheating

So, now that you have your keto breakfasts prepared, what do you do with them? Store them in the fridge and either reheat briefly for a couple of minutes in a microwave or dump the whole container into a frying pan and cook to heat through.

Either way, you’ve got a massive low carb and keto friendly breakfast ready to devour in mere minutes.
