How To Eat More Vegetables On Keto

I’m often finding myself reminding my kids to eat more vegetables but forget to do the same myself. So, I’ve come up with loads of ways to make sure that I get enough vegetables.

Low Carb Vegetable List

Here’s a handy list of low carb vegetables that you can enjoy on the Keto Diet:

  • Cauliflower
  • Broccoli
  • Mushrooms
  • Green Beans
  • Asparagus
  • Bok Choy
  • Leek
  • Spinach & Green Leafy Vegetables
  • Avocado (though technically a fruit!)
  • Zucchini
  • Eggplant
  • Radish
  • Cabbage
  • Brussels Sprouts

The following are high in carbs than the vegetables listed above, so enjoy more sparingly:

  • Peppers
  • Tomatoes
  • Onion
  • Garlic

Include a portion of vegetables with breakfast and you’re one step ahead of the veggie game.

Sometimes I’ll simply throw a handful of spinach on the side of my eggs or cook a low carb vegetable or two with my breakfast.

Prepare Vegetables As Soon As You Get Them

As soon as vegetables enter my kitchen, I try as prep them as much as possible. This includes chopping them into bite sized pieces and popping them into containers in the fridge. For example, washing a bag of spinach, chopping celery for snacks or dicing cabbage for egg roll in a bowl so that it’s quick and easy to grab when needed.

Roast Vegetables

When my fridge is overflowing with vegetables, I fill a roasting dish, drizzle over some olive oil and add a couple of shakes of salt and roast them until golden. Then, I have roast vegetables to grab as a side with whatever meal I like.

Cauliflower Mash is one of my go to vegetable sides. I make a huge batch and keep it on hand in fridge for days to add a cauliflower flair to a meal.

Sometimes I’ll even enjoy cauli mash by the bowl full and topped with a sprinkling of parmesan, as pictured above.

Keep Things Simple

No need to make every single recipe you find all at once. Keep it simple. Find a recipe or two that interests you, then rinse and repeat. Just as I mentioned cauliflower above, pick something that’s easy and versatile and do that!

As you can see from a couple of the photos in this post, I’ve been loving broccoli and mushrooms at the moment and have a meal prep container filled in my fridge with this sauteed combo to enjoy with meals.

Make Veggies Exciting

Yes, I just said keep things simple when you’re working out How To Eat More Vegetables On Keto. But there’s nothing wrong with challenging yourself once a week or even once a month and try a new vegetable recipe to make veggies more exciting.

Go Meatless More Often

I find that following Meatless Mondays forces me to eat more vegetables. So, not only do you save money by having to purchase less meat, you’re increasing the amount of vegetables that you consume.

Conceal Veggies

If you’re not a fan of a certain low carb vegetable, but you want more vegetable variety, then consider hiding them in your meals – just as you’d do for a fussy/picky child. Puree vegetables and cream to make a sauce, grate the vegetables into a meaty dish that you wouldn’t notice or make a smoothie and hide your greens that way.
