Tomato & Bocconcini Salad Recipe

This salad is so easy to throw together and it looks impressive. (If I do say so myself!)

When I first made this for my Husband he insisted that it’s his new favourite salad. And I have to confess that it’s one of mine too. The simple flavours just work so well together that it’s not only easy to make – it’s super easy to enjoy too!

Regarding the dressing, it really depends on how big a salad you make and what you want to dress yours with. I’m a bit obsessed with using Apple Cider Vinegar in recipes at the moment, so drizzled 2 teaspoons over my salad, along with 2 tablespoons of Extra Virgin Olive Oil.

Feel free to substitute with Balsamic Vinegar, which would work well too. Start with a little, taste and add more until it tastes perfect for you.

Tomato & Bocconcini Salad Recipe

  • Spinach Leaves
  • Tomato
  • Bocconcini
  • Apple Cider Vinegar or Balsamic Vinegar
  • Extra Virgin Olive Oil
  1. Place a bed of spinach leaves on a dish or in a salad bowl.
  2. Chop the tomatoes and bocconcini into bite sized pieces and scatter on top of the spinach leaves.
  3. Drizzle over apple cider vinger and olive oil.
  4. Toss to combine and refrigerate for at least half an hour for the flavours to develop.
  5. Serve and enjoy.
