I love finding creative ways of enjoying leftovers. And, these Keto Cauliflower Fritters are a delicious way to transform leftover cauliflower mash into something new.

For dinner, I had made my Irish Corned Beef and Cabbage and also a side of Cauliflower Mash. (Here are 5 Cauliflower Mash Recipes to choose from.)

My family enjoyed the meal and there were leftovers to spare. The following day, I decided to combine the leftover corned beef with cauliflower mash and these easy fritters were born. Here’s how to make them.

In a bowl, combine together leftover cauliflower mash, finely chopped Corned Beef and a beaten egg to form a smooth batter. You can add salt, pepper or your seasoning of choice.

Heat butter or coconut oil in a large frying pan (here’s my favourite frying pan) and, when hot, drop a tablespoon or two per fritter.

Cook until set, then flip and cook until golden on both sides and cooked through.

Move to a plate to serve and enjoy on their own or with tomato sauce, sour cream or mayo on the side.

The number of Keto Cauliflower Fritters you get will really depend on how much meat and cauliflower you have left over. If you have heaps, then you may need to add an extra egg to form your batter.

Keto Cauliflower Fritters Recipe

  • Cauliflower Mash
  • Corned Beef, finely chopped
  • 1 Egg, beaten
  • Salt & Pepper, to taste
  1. In a bowl, combine all of the ingredients until smooth.
  2. Heat butter or coconut oil in a large frying pan.
  3. When hot, drop 1-2 tablespoons of the fritter batter into the frying pan.
  4. Cook until set and then flip and keep cooking until golden on both sides and cooked through.
  5. Move to a plate to serve and enjoy with tomato sauce, sour cream or mayo.

When I made these for the family they LOVED them and want me to make them with leftovers in future. I may have to make a batch of Corned Beef and some cauliflower mash just to make these as they are just so good!
