This chicken soup with drumsticks recipe is what I make whenever we need our immune system boosted with a hearty, home cooked meal.
Yesterday we returned from a week away in England. All at differing stages of colds, thanks to recycled hotel air and a crazy schedule which saw us stay in 3 different locations within a week.
So, today, my first task (after starting on a week of laundry) is to make an enormous pot of chicken soup.
I went straight to the supermarket this morning and picked up a package of chicken drumsticks – my go-to choice for the best piece of chicken for making homemade chicken soup.
The Simple Ingredients For The Easy Recipe
Here are the budget friendly ingredients that you’ll need from the grocery store to be able to make the flavorful broth, as well as ideas for more ingredients to suit your personal preference and dietary requirements:
Chicken Drumsticks – I choose chicken drumsticks because of the flavour in the meat and bones. I’ve sometimes used chicken wings, chicken thighs or a whole chicken instead, but the drumsticks are easier to handle and de-bone once cooked.
There’s plenty of chicken meat to go around, so a kilo or couple of pounds will create a pot full of soup and enough chicken for a number of generous portions.
Vegetables – I’ve included onion and garlic, but you can feel free to include you own personal mix of vegetables such as chopped carrot, celery stalks or leek.
Seasoning – salt and black pepper create a perfect soup that’s full of flavor, you could add in your seasoning of choice or ingredients such as lemon juice, fresh cilantro, fresh dill or fresh parsley, depending on how you like your soup.
Noodle Soup Option – you can serve your chicken bone broth as is or with cooked egg noodles or zucchini noodles for a classic chicken noodle soup, the perfect comfort food complete meal to slowly sip on rainy days.
The soup is also really quick when compared to making homemade soup or stock with other ingredients.
The chicken drumsticks only need one and a half to two hours of cooking time to create a hearty soup, with the chicken tender and falling off of the bones.
Chicken Soup With Drumsticks Recipe
- 1/2 to 1 Onion, peeled and chopped
- 2-3 Garlic Cloves, peeled and chopped
- 1kg/2.2lbs Chicken Drumsticks
- Salt & Black Pepper, to taste
- Butter, Olive Oil or Coconut Oil, for cooking
- Cold Water
- Heat butter, olive oil or coconut oil in a large pot or saucepan over medium heat.
- When hot, add the chopped onion and garlic into the soup pot and cook until starting to soften.
- Add the chicken drumsticks, salt and pepper.
- Brown the chicken pieces on all sides, cooking in batches if need be.
- Once all of the chicken has browned, pour over cold water to cover.
- Bring up to the boil and then simmer for 1.5 to 2 hours or until cooked to your liking.
- Remove the chicken from the saucepan, remove the meat from the chicken bones and then return the shredded chicken to the soup.
- Serve as is or blend to create a smooth and creamy soup, storing cooled leftover soup in an airtight container in the fridge to re-heat within a couple of days.

- Salt & Black Pepper, to taste
