Cauliflower Egg Fried Rice Recipe
This cauliflower egg fried rice is really easy to prepare and you can mix and match the recipe to include your favourite low carb vegetables.
This is such a hearty dinner that you don’t even miss the carby rice at all. In fact, you may even find that this version is better than the original.
How To Make Cauliflower Fried Rice
Here are some ideas for finely chopped vegetables to include in your cauliflower egg fried rice. You choose any combination of vegetables for a rainbow cauliflower fried rice experience:
- Onion
- Green/Spring Onions
- Garlic
- Ginger
- Leek
- Zucchini/Courgette
- Mushrooms
- Broccoli
- Cauliflower
- Radish
- Asparagus
- Cabbage
- Red/Green/Yellow/Orange Peppers
- Tomatoes
- Spinach
- Kale
- Green Beans
When I filmed/photographed this recipe I chose to include chopped onion, zucchini and mushrooms, which is my veggie combination of choice.
If you’re not concerned with carbs, then you can also feel free to include traditional egg fried rice vegetables such as carrots, peas and corn.
Sesame oil and Tamari (which is a fermented soy sauce) bring wonderful flavours to the egg fried rice. But, don’t go out and buy them especially. I’ve made this with extra virgin olive oil instead of sesame oil, when my bottle ran out. While it didn’t have quite as much flavour as the sesame oil version, it was still tasty nonetheless.
For the cauliflower rice, you can buy ready riced cauliflower or you can easily rice it yourself by grating a head of cauliflower using a box grater.
Whichever way you choose to enjoy it, you’re going to love this simple and versatile dish.
Cauliflower Egg Fried Rice Recipe
- 1 Tablespoon Sesame Oil (or your oil/butter or choice)
- Low Carb Chopped Vegetables of Choice (from the above list)
- Salt, Pepper & seasoning, to taste
- Cauliflower Rice
- 1-2 Tablespoons Tamari
- 3-4 eggs, whisked
- Heat sesame oil, or your oil or butter of choice, in a large frying pan.
- When hot, add the chopped vegetables, salt, pepper and any other seasoning, to taste.
- Cook until softened, adding more oil or butter along the way, when needed.
- While the vegetables are cooking, rice the cauliflower by grating on a box grater.
- When the vegetables have cooked, add the rice into the frying pan, along with the tamari.
- Toss to coat the vegetables in the tamari and cook until almost done.
- Make a well in the centre of the vegetables and pour over the eggs.
- Toss to combine and keep tossing as the eggs are cooking.
- Cook until the eggs are done to your liking then remove from the heat and serve into bowls.
This cauliflower egg fried rice really makes such an easy keto friendly, vegetarian dinner. It’s great for when you want a hearty, budget friendly meat free meal – that’s wonderfully flavourful too.
