Vegetarian Mushroom Stroganoff Recipe – An easy, creamy and healthy one pot low carb dinner idea with sour cream and a selection of mushrooms.

Mushrooms have always been my all time favourite vegetable and so I always love experimenting with different ways to enjoy them. 

This vegetarian mushroom stroganoff is really a celebration of mushrooms. You can include any variety you like. I like to include the larger portobello mushrooms, along with the smaller cup or button mushrooms for a variety of textures and flavours. 

I find that the larger mushrooms can have an almost meaty flavour to them. So, if you’re not a vegetarian (like me) and are looking for more meat free meals that don’t make you feel like you’re missing out on meat, then this is the perfect recipe for you. 

Mushrooms for stroganoff

I haven’t listed the quantities because it really depends whether you’re making this recipe for one or the family. Also, you may prefer a creamier or less creamy dish. So, mix and match the ingredients and volumes to create your perfect mushroom stroganoff. 

You could also add in any other vegetables. Cauliflower would be wonderful to soak up all of the wonderful flavours and bulk out the dish. The finished dish can simply be enjoyed by the bowl full or served with rice, cauliflower rice or your side of choice. 

Easy Mushroom Stroganoff - Low Carb & Vegetarian Friendly

Vegetarian Mushroom Stroganoff Recipe

  • Onion, chopped
  • Garlic, peeled and chopped
  • Selection of Mushrooms, chopped
  • Paprika 
  • Salt & Pepper, to taste
  • Sour cream
  • Cream
  • Butter or Coconut Oil, for frying
  • Vegetable Stock (Optional)
  1. Heat butter or coconut oil in a frying pan. 
  2. When hot, add the chopped onion and garlic. 
  3. Cook until starting to soften and colour. 
  4. Add the mushrooms, paprika, salt and pepper to taste, along with more butter or coconut oil, if needed. 
  5. Cook until the mushrooms have reduced and cooked to your liking. You may need to add more butter or coconut oil along the way, or you could add the optional vegetable stock instead, a couple of tablespoons at a time to help the mushrooms cook. 
  6. Once the mushrooms are cooked, add sour cream and cream. If you’re making the dish for one then a couple of tablespoons of each should do it, for more add a quarter of a cup of each. 
  7. Allow the sauce to bubble away and thicken for a few minutes. 
  8. Serve and enjoy.
