Crustless Broccoli Quiche Recipe
This easy crustless broccoli quiche is perfect for breakfast casserole, light lunch or dinner that takes very little prep time.
Plus, it’s so versatile – you can mix and match any vegetables in this recipe to create your ideal crustless quiche.
It’s important to ensure that the quiche dish is really well greased to ensure easy removal. (And clean up!)
The simple ingredients of broccoli and leek work so well together that I don’t feel it needs any onion, red onions garlic or garlic powder.
The volume of eggs and cream will depend on the size of your vegetables and how eggy or veggy heavy you want your finished quiche to be.
You can also feel free to swap some of the cream for other options with healthy fats such as sour cream, keto friendly yogurt or a dairy free alternative, if you like.
Likewise with the cheese, you can swap or add in other cheese options such as feta cheese, parmesan cheese or gruyere cheese in the cheese quiche.
Other options include adding in any leftover chicken or meat, bacon or spicy sausage for a meaty quiche, heaps of spinach for a spinach quiche or another great way to enjoy the easy recipe is to ladle broccoli mixture into individual serving dishes, ramekins or a well greased muffin tin for crustless mini quiche.
This dish has a lot of flavor and makes a good option to meal prep, since you can prepare the crustless broccoli-cheddar quiche ahead of time and enjoy by the slice for a speedy meal.
Crustless Broccoli Quiche Recipe
- 1 Leek
- 1 Head of Fresh Broccoli
- Salt & Black Pepper, to taste
- 4-6 Large Eggs
- 1/4 to 1/2 Cup of Heavy Cream
- 1/2 Cup Grated Cheddar Cheese
- Butter, Olive Oil or Coconut Oil, for frying
- Heat oven to 180C/350F and well grease an oven safe pie or quiche baking dish.
- Heat oil or butter in a frying pan or large skillet on the stove top over medium heat.
- Meanwhile, chop the leek and broccoli into bite-size pieces with a sharp knife on a cutting board.
- When the pan is hot, add the leek and cook until starting to soften.
- Add the chopped broccoli florets, salt, pepper and any other seasoning to taste.
- Cook broccoli and leek, adding more butter or oil when needed, until starting to soften. Then, move the vegetables to the prepared quiche dish.
- Whisk the eggs, cream and half the cheese, together in a large bowl.
- Pour the egg mixture over the vegetables.
- Top with the other half of the cheese.
- Place into the preheated for 20 to 30 minutes, or until golden to your liking.
- Slice into 8 pieces and serve.
