I just love experimenting with different low carb, sugar free sweet treats. It’s been a while since I brought peanut butter into the mix. (The last time was this peanut butter mousse)
So, I present for your enjoyment – Keto Chocolate Peanut Butter Fudge.
It’s kind of like the fudge version of peanut butter cups – but without any layers or fiddlyness. (Is that even a word?!)
The bite sized treats make brilliant keto lifestyle fat bombs as they will easily satisfy your sweet tooth while helping you meet your macros.
The first time that I made this keto chocolate fudge recipe I was amazed at how just 3 ingredients can create the perfect fudge consistency and taste.
And the best part is that dozen (or more) batches later, I still can’t get over how the simple combination creates such a decadent and delicate dessert.
Keto Fudge Recipe Ingredients
This keto fudge recipe doesn’t have any coconut oil, heavy cream, unsalted butter, unsweetened cocoa powder or other low carb ingredients that you’ll often find in low carb fudge.
Here are the only 3 simple ingredients you’ll need for easy fudge recipe that’s gloriously low in net carbs.
Chocolate – go for a 85% or 90% block of chocolate or sugar free chocolate chips, you can use a combination of chocolate, even including sugar free white chocolate for an easy chocolate treat.
Peanut Butter – opt for a natural peanut butter that’s unsweetened and doesn’t have any added sugars or carbs.
I prefer to use smooth peanut butter, but you could go for crunchy peanut butter if you’d prefer a crunchy texture.
You could swap the peanut butter in this low carb recipe for your choice of nut butters that you can find at grocery stores instead if you like, almond butter would work well in the delicious treat.
Stevia – you can use whatever low carb friendly sweeteners you usually use in keto treats in this simple recipe, keep in mind that a powdered sweetener is quicker to dissolve than a granulated sweetener, but either will do.
How To Make Keto Fudge
To make low carb fudge couldn’t be simpler – all you do is combine the 3 ingredients together in a saucepan over low heat.
Then, simply heat until melted and you have a creamy chocolate and peanut butter pool.
Pour the peanut butter mixture into a wax paper lined airtight container, allow to cool to room temperature, pop it into the fridge to set and harden for a few hours and then cut the sweet treat into bite sized small pieces.
I used a small rectangular dish and ended up with shallow fudge. Use a smaller dish – or double the recipe and make a larger portion in a square pan.
But beware – once you taste the chocolate peanut butter fudge, you’re not going to be able to get enough, so I prefer making a small amount to exercise portion control.
Regarding the ingredients in the homemade fudge – use the highest % and lowest carb chocolate, ideally 85% or 90% is perfect. (Like this one.)
For a creamy fudge, use a smooth, creamy peanut butter. (Like this one.)
Use stevia or whatever sweetener you’re used to – adding more or less depending on how sweet your chocolate is and how sweet you want the fudge to be.
This easy recipe is low carb diet and keto diet approved and makes a brilliant make ahead rich chocolate treat all year around, although they are especially lovely to enjoy during the holiday season instead of carby treats.
You’ll find that the ketogenic diet approved fudge is better than the real thing, the perfect consistency and, as you’ll see, it’s super quick and easy to make.
Keto Chocolate Peanut Butter Fudge
- 100g/3.5 ounces Dark Chocolate, chopped
- 1/4 Cup Creamy Peanut Butter
- 1/4 Cup Stevia or your sweetener of choice
- Place the chopped chocolate, peanut butter and stevia into a small saucepan.
- Heat over low heat on the stove top until the chocolate has completely melted.
- As soon as the chocolate has melted, remove from the heat.
- Prepare a small rectangular dish or loaf pan by lining it with well greased baking parchment paper.
- Pour the peanut butter and melted chocolate mixture into the prepared pan and smooth to an even layer.
- Allow to cool to room temperature then place into the fridge for a few hours to set.
- Remove from the fridge and cut into fudge pieces.
- Store in the fridge and enjoy the pieces of fudge within a few days.
