Three Cheese & Zucchini Bake Recipe
This zucchini bake recipe is so easy and can be adapted to include whatever cheese (and vegetables) you like.
Depending on how many carbs you want to allocate, you can choose to include as little or as much leek, garlic and onion as you like.
You can choose one or all three vegetables and decide how to balance your perfect zucchini casserole.
I went for feta, cream cheese and grated mozarella as my cheese choices. Feel free to use this combination or your own favourite cheeses instead to create a high protein cheesy casserole.
I mention 1/4 to 1/2 cup of each cheese in the recipe because it’s up to you how cheesy and creamy you want your cheese sauce to be.
This dish makes a great cheesy vegetarian dinner or side dish and is the perfect low carb comfort food.
Three Cheese & Zucchini Bake Recipe
- 1/2 to 1 Onion
- 2-3 Garlic Cloves
- 1 Leek
- 2 Zucchini
- Salt, Pepper & Seasoning, to taste
- 1/4 to 1/2 Cup Crumbled Feta
- 1/4 to 1/2 Cup Cream Cheese
- 2 Eggs
- 1/4 to 1/2 Cup Grated Cheese
- Butter or Coconut Oil, for frying
- Preheat the oven to 180C/350F, get out an oven proof dish and well grease it.
- Peel and chop the onion, garlic and leek.
- Heat butter or coconut oil in a large frying pan.
- When hot, add the onion, garlic and leek.
- Slice the zucchini into rounds and add to the vegetables in the frying pan.
- Cook until the vegetables have softened and starting to brown, then move to the prepared oven proof dish.
- Crumble the feta into a bowl and mash until smooth.
- Add the cream cheese and eggs and whisk until you have a smooth, creamy cheese sauce.
- Pour the cheese sauce over the vegetables in the dish.
- Mix until well combined and then top with grated cheese.
- Place into the preheated oven for 20-30 minutes or until golden to your liking.
- Remove from the oven, serve and enjoy.
