These keto almond cookies are so incredible easy to make, high in healthy protein and are the perfect portion controlled low carb sweet treat.
I adore nourishing recipes like this – these healthy almond flour cookies include just a few simple ingredients, each full of nutrients, that are easy to find at grocery stores.
When I’m making these delicious cookies, I tend to make scrambled eggs or an omelette for breakfast. I separate one of the eggs, move the white to a ramekin and then pop the yolk into the scrambled egg/omelette batter. (Along with a couple more eggs.)
Then, when it’s time to make the cookies, I have the egg white ready to go and I don’t have to waste the yolk.
You may have a bag of almond flour or ground almonds open from making almond waffles or almond flour pancakes, and this basic recipe for soft cookies is a great recipe to ensure that nothing’s wasted.
How To Make Keto Cookies
Making the almond flour cookies recipe is really easy. You simply whisk the egg white in a large mixing bowl with an electric beater, until thickened.
Then, whisk in the stevia and vanilla until you have a glossy mixture – almost like a meringue batter. You can use your sweetener of choice and include 1/3 or even 1/2 a cup for sweeter cookies.
Finally, fold through the ground almonds, until you have a cookie batter. The finer the ground almonds or brands of almond flour you use in the healthy cookie recipe, the finer the cookie texture will be.
For lighter cookies that rise a little bit, consider folding a half to a teaspoon of baking powder through the main ingredients. You can also fold through chopped dark chocolate or semi-sweet chocolate chips for chocolate studded cookies.
Drop a teaspoon of cookie dough per cookie onto a lined and greased baking tray in a single layer. Bake for 10 to 15 minutes – a shorter baking time will result in chewier cookies, while longer will create crispier cookies.

- 1 Egg White
- 1/4 to 1/3 Cup Stevia
- 1/2 to 1 teaspoon Vanilla Extract
- 1 Cup Ground Almonds
- Preheat the oven to 180C/350F, get out a baking tray and line it with well greased baking parchment paper.
- Pour the egg white into a large bowl and whisk with an electric mixer, until thick.
- Whisk in the stevia.
- Add the vanilla and whisk until thick and glossy.
- Fold through the ground almonds, until you have a cookie dough.
- Get out the prepared baking sheet and drop a teaspoon per cookie.
- Place into the preheated oven for 10 to 15 minutes, or until cooked to your liking.
- Remove from the oven, allow to cool to room temperature to crisp up, store in an airtight container or cookie jar and enjoy.
