Coleslaw is a tasty side dish to enjoy with low carb meals. And, it’s easy to make a creamy, low carb and high fat keto friendly version.
Avocado and sour cream blend together to create a creamy dressing which uplifts the cabbage into a dreamy coleslaw.Keto Coleslaw Ingredients
Cabbage is a keto friendly ingredient and wonderful enjoyed in a coleslaw. You can follow the recipe below and include the core 4 ingredients, or add in any of the following low carb friendly ingredients to create a more complex coleslaw.
- Lemon or Lime – 1-2 tablespoons juice and/or zest
- Instead of sour cream – mayo or low carb yoghurt
- 1-2 Tablespoons Apple Cider Vinegar
- A teaspoon of Mustard
- A couple of tablespoons or a quarter of a cup of Grated Cheese
- 2-3 Tablespoons Nuts & Seeds – pine nuts, sunflower or pumpkin seeds
- Salt, pepper and any other seasoning
Low Carb Coleslaw Recipe
- 1/2 Cabbage
- 1 Avocado
- 1/4 to 1/2 Cup Sour Cream
- Salt
- Using a box grater, grate the cabbage.
- Move to a salad bowl.
- Mash the avocado, add the avocado, sour cream and salt.
- Mix together until smooth and creamy.
- Pour the avocado dressing over the grated cabbage.
- Stir through until combined. Taste the coleslaw and add more sour cream or salt to taste.
- Place into the fridge for a few hours to allow the flavours to develop and enjoy.
