This easy gluten free granola recipe is inspired by a store-bought granola that I tried during a recent, quick trip to Rotterdam in the Netherlands.

One of my absolute favorite things to do while travelling is go into supermarkets and spend AGES wandering up and down and looking at all of the foreign (to me) products.

Thanks to the google translate app on my phone, I could roughly work out what each item contained and found this granola which perfectly met my eating requirements.

I grabbed a tub of yogurt and headed back to my hotel and enjoyed one of the best granola products I had ever experienced. So chocolatey, nutty and perfect.

So, I bought another couple of boxes to take home. (For research purposes of course!) Once home, I tried my best to properly translate the ingredients list and work out the volumes so that I can continue to enjoy the granola – without having to leave the country. (Or my home!)

I feel like my version is pretty close to the original – crunchy, chocolatey, nutty goodness in every mouth full.

The Simple Ingredients For The Easy Recipe

Here are the ingredients that you’ll need for the grain-free granola –

Sunflower Seeds – I always pick up sunflower seeds at budget friendly ALDI supermarkets to use in this recipe and to enjoy as a healthy snack. You can also mix in other seeds such as chia seeds, pumpkin seeds, flax seeds, sesame seeds or hemp seeds.

Cashew Nuts – for added crunch, protein and flavor, chopped cashew nuts are the perfect extra nutty element. You can swap for another nut or add in extra nuts such as almonds, walnuts or pecan nuts.

Dried Figs – chopped dried figs adds a fruity element to the granola mixture. You can swap for any chopped dried fruit you like including goji berries, Medjool dates, cranberries or golden raisins.

Simple ingredients for homemade gluten free granola recipe

Coconut – you can use any kind of coconut including shredded coconut, desiccated coconut, coconut chips or coconut flakes.

Chocolate – to make a chocolate infused gluten-free granola recipe I’ve included both cocoa powder and cacao nibs, and you can also feel free to mix chocolate chips through the delicious granola.

Coconut Oil – to help bind all of the ingredients together and add beneficial healthy fats, coconut oil is added to the mixture.

Pure Maple Syrup – to achieve the right amount of sweetness, maple syrup is added to the granola. You can feel free to swap for any natural sweeteners you like instead.

Extra Ingredients – here are some ideas for paleo diet friendly ingredients that you can add to the homemade gluten free granola depending on your tastes and dietary requirements – orange zest, almond butter, vanilla extract, pinch of salt, coconut sugar, hemp hearts, ground cinnamon, peanut butter or cashew butter.

How To Make Paleo Chocolate Granola

To make the simple recipe, you’ll need:

  • 1 Cup Sunflower Seeds
  • 1/4 Cup Chopped Cashews
  • 1/4 Cup Chopped Dried Figs
  • 2 Tablespoons Shredded/Dessicated Coconut
  • 2 Tablespoons Cocoa Powder
  • 1 Tablespoon Cacao Nibs
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Maple Syrup

You simply mix all the dry ingredients (including the figs) together in a bowl.

Then, melt the coconut oil and maple syrup and mix through the chocolate, nutty bowl full.

The paleo granola is then slowly baked on a baking sheet lined with well greased baking parchment paper in a 100C/250F oven, for about an hour. Toss it around every 20 minutes so it cooks evenly and becomes perfectly golden brown.

Once cooked to your liking, allow to cool to form crunchy clusters and enjoy as you would traditional granola with your choice of almond milk, yogurt with fresh fruit, smoothie bowls, ice cream or by the hand full as a snack.

How to make easy homemade chocolate nutty granola

Store the crunchy granola clusters that have cooled to room temperature in an airtight container and enjoy the vegan granola within a week.

This recipe is for my perfect gluten free granola version. Feel free to swap around the ingredients to include your favourite nuts or include more or less chocolate or maple syrup. Or swap the maple syrup for your sugar or sweetener of choice.

Ingredients

  • 1 Cup Sunflower Seeds
  • 1/4 Cup Chopped Cashews
  • 1/4 Cup Chopped Dried Figs
  • 2 Tablespoons Shredded/Dessicated Coconut
  • 2 Tablespoons Cocoa Powder
  • 1 Tablespoon Cacao Nibs
  • 1/4 Cup Coconut Oil
  • 1/4 Cup Maple Syrup

Instructions

  1. Preheat the oven to 100C/250F and line a baking tray with well greased baking paper.
  2. In a bowl add the sunflower seeds, cashews, figs, coconut, cocoa powder and cacao nibs. Stir well to combine.
  3. Add the coconut oil and maple syrup into a small saucepan and melt over low heat.
  4. Once melted, pour over the ingredients in the bowl and toss through to coat the nuts and chocolate in the coconut oil mixture.
  5. Place the granola mixture onto the prepared baking tray and pat down to flatten it all into a single layer.
  6. Place into the preheated oven for 1 hour, removing from the oven every 20 minutes to toss the granola to ensure it cooks evenly.
  7. Once down to your liking, remove from the oven and allow to cool to form clusters.
  8. Store in an airtight container.
