Keto Blueberry Pancakes Recipe
These easy keto blueberry pancakes have only 5 ingredients and are quick to prepare and a delight to enjoy.
You can use almond flour or ground almonds, just depends on what you have to hand and the texture of the pancakes you’re after.
It’s up to you how much stevia (or your sweetener of choice) you include in your pancake batter. It depends on how sweet you’d like your pancakes to be.
I’ve included a quarter of a cup of blueberries in the pancake batter, this keeps the carb count down. If you’d prefer to allocate more carbs to your pancakes then feel free to use a half of a cup (or more) instead.
Almond milk is much lower in carbs than dairy milk. (My carton of almond milk has virtually zero carbs.) Feel free to substitute in whatever low carb milk you usually use instead.
Low Carb Pancake Topping Ideas
As a topping for the pancakes, you can scatter over a handful of blueberries as I have done. (And count the blueberries accordingly.
You could also top your pancakes with a swirl of whipped cream, low carb ice cream or a teaspoon of butter or could also choose from my list of 20 perfect pancake toppings.

Keto Blueberry Pancakes Recipe
- 3 Eggs
- 1/2 Cup Almond Milk
- 1-2 Tablespoons Stevia
- 1 and 1/3 Cups Almond Flour
- 1/4 Cup Blueberries
- In a large bowl, whisk the eggs, almond milk and stevia together until smooth.
- Add the almond flour and whisk until you have a pancake batter.
- Stir through the blueberries until well incorporated.
- Heat butter or coconut oil in a frying pan.
- When hot, drop 2 tablespoons per pancake and cook until set on one side.
- Flip the pancakes over until cooked through on both sides and golden.
- Move to a plate, top with your toppings of choice and enjoy.
