This oxtail soup recipe makes a warming comfort meal that’s perfect to slowly cook over a couple of days and then enjoy a hearty bowl full of soup with meltingly tender meat.
The rich broth develops from the long cooking time and is always a welcome meal, especially on a cold day. Best of all, a good thing is that when cooking meat for a lot of time in a traditional method, it releases a whole host of beneficial nutrients from it’s bones and connective tissue, including a ton of collagen and Vitamin B6, into the oxtail broth.
The delicious oxtail soup is such an easy dish to prepare – simply brown the oxtail, in batches if need be. Then, saute onion and garlic until golden, add back the browned meat and pour over a few cups of water to cover.
Allow the oxtail to simmer for a couple of hours, remove from the heat and allow to cool completely.
I find that leaving the ox tail overnight develops so much flavor and results in tender, falling of the bone fatty meat that makes a sublimely comforting dish.
The following day, remove the fat layer from the top of the oxtail and then bring it back up to the simmer. Bubble the beef broth gently for a few hours of cooking until the meat is tender to your liking.
You can also cook the original recipe in a pressure cooker, slow cooker or instant pot, just follow the directions on your device and adjust the cooking time accordingly.
There’s a whole host of vegetables you could add to your hearty soup. I simply opt for chopped broccoli, but here are some other ideas for vegetables to include in your soup, depending on your tastes, dietary requirements and what you can easily find at your local grocery store:
- Cauliflower
- Zucchini
- Mushrooms
- Boy Choy
- Green Onions
- Radishes
- Potatoes, Carrots or other root vegetables
You can also add in any fresh herbs, bay leaves or seasoning you’d like to flavor your hearty oxtail soup recipe to your liking. Other flavor options include pouring in some red wine, soy sauce, lime juice or Worcestershire sauce.
Tender oxtail meat has a wonderfully rich flavor and makes a hearty stew with the cheap cut of meat that’s perfect to slowly cook on a cold winter day.
Oxtail Soup Recipe
- 2-4lbs/1-2 Kg Oxtail
- 1-2 Onions, peeled and chopped
- 3-4 Garlic Cloves, peeled and chopped
- Salt & Black Pepper, to taste
- 1/2 to 1 Head of Broccoli
- Coconut Oil or Olive Oil, for cooking
- Heat oil in a large saucepan over high heat.
- Shake salt and pepper, to taste, over the oxtail.
- Place oxtails in the cooking pot when it’s hot.
- Cook until browned on all sides, cooking in batches, if need be.
- Remove the browned oxtail pieces to a plate and briefly cook the onion and garlic, until golden.
- Add the oxtail back into the saucepan and pour cold water over to cover.
- Bring the saucepan up to the boil, reduce the heat down to a low heat and gently simmer for around two hours.
- Remove the comforting soup from the heat, allow to cool to room temperature and then store in the fridge overnight.
- The next day, remove the saucepan from the fridge and remove the fat layer from the top of the soup.
- Place the oxtail back onto the stove top, bring up to the boil, reduce to a simmer and cook for a final 2 hours, or more depending on how tender you’d like your meat to be.
- Once the soup is almost ready, add in chopped broccoli or your vegetables of choice and cook until done to your liking.
- Serve out into bowls and enjoy the delicious soup.
