These Gluten Free Banana Chocolate Chip Muffins make a tasty sweet treat or even an indulgent breakfast.

Coconut flour is used to bind the muffins together, you only need 1/3 cup and the resulting muffins are wonderfully moist and perfectly cooked.

You can use any sugar you like, I usually use a raw sugar called demerara sugar that’s golden like brown sugar and adds a caramelised flavor to the muffins.

These muffins are so quick and easy to prepare – simply mix the coconut flour and sugar together.

Then, melt the butter and mix the other wet ingredients together, before pouring the wet mixture over the flour sugar mix and forming a muffin batter.

Finally, chocolate chips are folded through and the batter is moved to a prepared muffin tin for baking.

I actually find that the muffins are best stored and enjoyed from the fridge, so you can make them ahead of time and have the treats waiting in the fridge to be enjoyed through the week.

How to make easy muffins with coconut flour banana and chocolate chips

  • 1/3 Cup Coconut Flour
  • 1/3 Cup Brown Sugar
  • 75g/2.6oz Butter
  • 2 Bananas
  • 1 Egg
  • 2/3 Cup Milk
  • 1/2 to 1 teaspoon Vanilla
  • 100g/3.5oz Chocolate Chips
  1. Preheat the oven to 180C/350F and line a 12 hole muffin tin with liners.
  2. Place the coconut flour and sugar into a large bowl and stir to combine.
  3. Melt the butter and set it aside to cool.
  4. In a second bowl, mash the bananas until smooth, then mix in the melted butter, egg, milk and vanilla and mix until fully incorporated.
  5. Pour the banana mixture over the coconut flour and sugar mixture and stir through until it starts to come together in a muffin batter.
  6. Add the chocolate chips and stir through well.
  7. Drop a couple of tablespoons into for each muffin into the prepared muffin tin.
  8. Place into the preheated oven for 20 to 25 minutes or until golden and cooked through.
  9. Allow to cool completely, then enjoy.
