This gluten free blondies recipe make a fun sweet treat to enjoy anytime, but we particularly enjoy them at birthday celebrations.
A classic blondies recipe is simply blonde brownies or brownies made without cocoa powder or traditional chocolate but rather white chocolate and other simple ingredients to make a treat that will absolutely satisfy your sweet tooth.
If you’d like the blondies to have a caramel like flavor, then swap the white sugar for brown sugar, dark brown sugar or coconut sugar, or use half regular and half brown sugar for a slight caramel flavor.
You can also swap the white chocolate chips for butterscotch chips, peanut butter chips or even dark chocolate chips in the blondie batter.
Coconut flour is used in place of all purpose flour in the key ingredients for easy recipe. The ingredient can be a little unpredictable in baked goods, so if your brownie batter is a little too thick, just add a couple of tablespoons of water to the wet ingredients to loosen it up.
The recipe comes together really quickly, you simply melt the butter and them mix everything together in a large bowl. The best results when making brownies is to very quickly mix everything together.
You don’t even need to use a stand mixer or hand mixer, just mix it all together with a spoon or spatula. Then, bake in your prepared pan until perfectly chewy and gooey.
Gluten Free Blondies Recipe
- 150g/5.3oz Unsalted Butter
- 1/2 Cup Sugar
- 1/4 Cup Coconut Flour
- Pinch of Salt
- 1/2 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- 2 Large Eggs
- 100g/3.5oz White Chocolate Chips
- 1-2 Tablespoons Sprinkles/Hundreds & Thousands
- Preheat the oven to 180C/350F and line a square baking tin with well greased baking parchment paper.
- Melt the butter in a saucepan on the stove over low heat and then pour it into a large mixing bowl.
- Add the dry ingredients of sugar, coconut flour, salt and baking powder to the melted butter in the large bowl and mix well with a wooden spoon or rubber spatula to combine.
- Add the vanilla and eggs and whisk until you have a smooth brownie batter, adding in a couple of tablespoons of water if the mixture is too thick.
- Fold through half of the white chocolate chips and sprinkles/hundreds and thousands.
- Move the batter to the prepared baking dish and top with the rest of the white chocolate chips and sprinkles/hundreds and thousands.
- Place in the preheated oven and bake for 25 to 30 minutes or until golden brown and cooked through.
- Allow the chewy gluten free blondies to cool completely to room temperature in the tin, then cut into bite sized pieces and enjoy, storing any leftovers in an airtight container.
