2 Ingredient Chocolate Truffles

These 2 ingredient chocolate truffles are a decadent chocolate dessert that can be completely dairy free, low carb, keto, paleo and vegan friendly. (Just depending on the chocolate you use.)

The recipe is adapted from my 3 ingredient truffles, which I had wanted to make the other week, but didn’t have any cream in my fridge. (Shock horror!)

So, I decided to see if I could make them, but with canned coconut milk, which I always have in my pantry, instead of the cream.

The truffles turned out to be just as creamy and full of chocolate flavor. You don’t really notice the coconut flavor, which I was hesitant about as my Husband is not the biggest fan of coconut flavored treats.

They are simply perfect creamy chocolate truffles that are super easy to make and are an indulgent dark chocolate sweet treat dessert.

Chocolate Truffle Ingredients

Ingredients - coconut milk and chocolate

Here are the ingredients you’ll need, plus loads of ideas for additional simple ingredients you can add in to create the truffles of your dreams.

Chocolate – you can really use any chocolate you’d like in these truffles. If you want the dessert to be dairy free, just be sure to use a dairy free chocolate.

Chopped chocolate

For sugar free, low carb, keto friendly truffles, just use a low sugar chocolate option, which is usually 70%, 85%, 90% dark chocolate or higher.

I tend to chop my chocolate first, so I have a bowl full of chopped chocolate ready and waiting for when the coconut milk has heated.

Mixing the truffles batter together

Coconut Milk – ideally use full fat canned coconut milk or coconut cream for rich and creamy truffles. I usually measure out three quarters of a cup of coconut milk from a large can, then pour the rest into a container to store in the fridge and use in hot chocolates, smoothies, soups or stews.

You could also keep small containers of coconut milk in your pantry to use specifically in the recipe if you don’t want to have any leftover coconut milk to use in other recipes.

I’ve used the stove top to heat the coconut milk, but you could pop it in the microwave and heat for 20 seconds at a time, give it a stir and return for a further 20 seconds or until heated through.

Flavor – you can add in a half a teaspoon to a teaspoon of flavor such as vanilla extract, peppermint extract or orange extract for flavored truffles.

Sweetness – I tend to find the dark chocolate to be sweet enough, but you could add in a couple of tablespoons of stevia, honey, maple syrup, sugar or your sweetener or sugar of choice. (Depending on your tastes and dietary requirements.) Mix in the sweetness to heat with the coconut milk so that it completely dissolves.

Optional add ins

Add ins – you could add in or scatter chopped nuts, ground nuts, coconut, cocoa powder or chocolate chips over or through the truffles.

The delicious chocolate truffles make an indulgent, bite sized sweet treat all year around, but especially at Valentine’s Day, Christmas and as a gifting option all through the Festive Season.
