This apple and cinnamon muffins recipe makes a super easy, healthy sweet treat that the whole family will enjoy.
The batter comes together in just one medium bowl. You simply whisk the dry ingredients and wet ingredients together, one at a time, divide the mixture between muffin cups, then bake and enjoy homemade easy apple cinnamon muffins.

Here are some tips about the ingredients that you’ll need to make the simple cinnamon apple muffins:
For the cinnamon sugar mixture, I’ve suggested brown sugar, which gives the muffins a caramel like flavor. You can use whatever brown sugar or golden sugar you can get hold of, or white sugar if that’s all you have.
I’ve listed milk in the recipe, but you can swap that for buttermilk, sour cream or yogurt for a subtle sour flavor in the healthy muffins.
Baking soda is known as bread soda here in Ireland, but it may also be called bicarb where you are – it helps the ingredients react together and create light, fluffy muffins.
For the star of the muffins – the apples – you can use 2 to 4 apples, depending on the size and how apple dense you want the muffins to be.
You can use any kind of apples you like. It’s your personal preference whether you use red apples, pink lady apples or granny smith apples, and whether the apples are roughly chopped, grated or a bit of both for the easy apple muffins.
You can also finish off the tops of the muffins with a crumb topping Streusel topping by sprinkling over extra cinnamon, brown sugar and even oats over the top for an extra indulgent sweet crumb finish!
Apple and Cinnamon Muffins Recipe
- 125g/4.4oz Unsalted Butter, Softened at room temperature
- 1/2 Cup Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 1/2 Cup Milk
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 2 Cups Plain All Purpose Flour or Whole Wheat Flour
- 2-4 Fresh Apples, peeled, cored and chopped into small pieces
- Preheat the oven to 180C/350F and line a 12 hole muffin tin with muffin liners.
- Place the softened butter and sugar in a large bowl.
- Whisk, using an electric mixer, until creamy.
- Add in the eggs, vanilla and milk, then whisk until smooth.
- Then, add the cinnamon, baking soda and baking powder and whisk until fully incorporated.
- Remove the beaters, add the flour and mix through with a spoon or spatula until you have a smooth, thick batter.
- Mix the diced apples into the muffin batter.
- Divide batter between the muffin liners in the muffin pan.
- Place into the preheated oven for 25 to 35 minutes or until golden and cooked through. Store cooled muffins in an airtight container and enjoy within a few days.
