This easy cucumber salad recipe makes the perfect side dish to enjoy with your choice of healthy main courses.
You can make the salad any time of year, although it’s especially refreshing served on a hot summer day.
The Simple Ingredients For The Easy Recipe
You only need four main ingredients to create a creamy salad that will wow a crowd.
Cucumber – use any kind of cucumbers you like in the quick recipe. Choose from English Cucumbers, Persian Cucumbers or even seedless cucumbers if you’d like.
Red Onion – to add extra crunch and flavor, I’ve added half a chopped red onion, you can swap for any kind of onion you like or skip it if you prefer healthy salads without onion.
Sour Cream – my tangy, creamy ingredient of choice in the simple dressing. Feel free to swap for Greek yogurt or mayo if you prefer.
Lemon – to add extra flavor I’ve simply mixed through a couple of tablespoons of freshly squeezed lemon juice. You can substitute with red wine vinegar, apple cider vinegar, white vinegar or lime juice.
Extra ingredients – you can feel free to adapt the simple salad to include your choice of fresh ingredients. Choose from adding in fresh herbs such as fresh basil or fresh dill, sea salt, black pepper, cherry tomatoes, sesame seeds or a cheese such as feta cheese.
You can also add in a little sugar or stevia to balance the tangy sourness of the cucumber onion salad.
How To Make The Simple Recipe
The simple salad comes together really quickly. Start by chopping your crisp cucumbers into your desired shape. I like half moons, but you may prefer rounds or diced cubes.
Add in chopped red onion and any other ingredients you’d like to include in your salad. Then squeeze over the lemon juice and pour over the sour cream for your creamy dressing.
Combine cucumbers with the dressing and mix until you have a glorious creamy salad. You can serve the salad straight away or pop it in the for a few hours or even overnight.
You’ll find that the next day the salad flavors have mingled together and developed into a creamy, dreamy salad that you can serve with your meal of choice or even take to a summer cookout.
Easy Cucumber Salad Recipe
- 1 Cucumber
- 1/2 Red Onion
- 1-2 Tablespoons Lemon Juice
- 1/4 Cup Sour Cream
- Slice cucumbers into thin slices of rounds or half moons, then move to a large bowl.
- Peel and dice the red onion then add them to the sliced cucumbers.
- Squeeze over the fresh lemon juice, then pour over the sour cream.
- Combine together until the cucumber slices are completely covered in the homemade salad dressing.
- Serve immediately or move to a salad bowl or airtight container, place in the fridge for a little time to allow the fresh flavors of the simple cucumber salad to develop and enjoy within a day.
