Creamy Corn Salad Recipe
This creamy corn salad recipe is my latest go to dish that I make for picnics, potlucks, summer BBQs and an easy make ahead lunch or easy dinners.
It’s always a crowd pleaser and a brilliant way to get pickier eaters to consume more vegetables any time of the year.
Salad Ingredients

You only need 4 ingredients for this salad:
Corn – I’ve use frozen corn that I’ve thawed in this salad, you could cook the corn if you’d prefer, use corn cobs, fresh corn kernels or you can use a can of corn that you drain, instead.
The below recipe serves 4 as a side, if you’d like to serve more or make it more of a meal then simply double the quantities to enjoy as a refreshing side dish during the summer months.

Lemon – use as much lemon zest and lemon juice as you like for a zingy lemony flavor. You can swap the lemon in the summer corn salad recipe for lime juice and zest, if you’d like. You can swap the lemon for lime juice and zest, if you’d like.
Sour Cream – is my creamy ingredient of choice in easy recipes. You can used 1/4 to 1/2 cup, or more and also you can swap the sour cream for creamy mayonnaise, Greek Yogurt or a little bit of cream cheese in the dressing ingredients, if you want to instead.

Feta Cheese – adds lovely, natural saltiness and flavor to the easy corn salad.

There are plenty of other ingredients you can add to your creamy corn salad, such as:
- Salt, Black Pepper, garlic powder, onion powder, chili powder & any other seasoning
- Drizzle of olive oil
- Chickpea, Lentil or Black Bean
- Grated Cheese such as a sharp cheddar cheese
- Chopped green onions or red onion
- Fresh herbs such as fresh cilantro
- Chopped red bell pepper or green pepper
- Sunflower Seeds
- Flaked Almonds
- Pumpkin Seeds
- Cranberries
- Walnuts

You can store the salad in a salad bowl in the fridge, although my preference is a glass storage container so that I can easily transport the salad if need be. (Here are glass storage containers on Amazon.)
Another option is to throw the salad into an airtight container or lunch box, like in the below pictured box with sliced cheese and a handful of dried cranberries.

Creamy Corn Salad Recipe
- 2 Cups Frozen Corn
- 1/4 to 1/2 Lemon
- 1/4 to 1/2 Cup Sour Cream
- 1/4 to 1/2 Cup Feta Cheese
- Place the sweet corn into a large bowl and thaw for a few hours, draining excess liquid as necessary. You could also cook the corn or use a can of corn that’s been drained, to speed up the process.
- Once the corn has thawed, grate over the zest and squeeze over the juice of as much lemon as you’d like.
- Add the sour cream and stir the corn mixture well to combine the creamy mixture together.
- Crumble over the feta, then serve the simple corn salad with bold flavors and enjoy.
