Keto Cauliflower Soup Recipe
This Keto Cauliflower Soup Recipe is the perfect comfort food that the whole family will enjoy, especially on chilly nights during soup season.
Cauliflower is such a wonderfully versatile keto diet food that can be transformed into cauliflower mash, rice or in this instance a creamy soup that’s naturally low in grams of net carbs.
The healthy soup is pretty much a low-carb diet friendly version of a classic leek and potato soup – but with cauliflower florets used in place of potatoes.
Blue cheese is the perfect topping as it brings the rich flavors together and adds it’s distinctive strong taste. You could swap the blue cheese for fried crispy bacon bits or cheese such as a sharp cheddar cheese which are other popular toppings for such a soup.
I’ve simply seasoned the healthy cauliflower soup with sea salt and black pepper, but you can feel free to add in your seasoning of choice such as oregano, basil, chili powder or sprinkle over chopped green onions for added flavor.

You could also easily make the keto soup recipe dairy free by blending through coconut cream or coconut milk and sprinkling a dairy free cheese over the top of your velvety soup.
Creamy Keto Cauliflower Soup Recipe
- 1-2 Leeks, Chopped
- 3-4 Garlic Cloves, Peeled and Chopped
- 1 Head of Cauliflower, Chopped
- Salt & Black Pepper, to taste
- 4 Cups Vegetable Stock or Chicken Stock
- 1/4 Cup Heavy Cream or Sour Cream (Optional)
- Blue Cheese (Optional)
- Butter or Coconut Oil, for frying
- Heat butter or coconut oil in a large pot or saucepan over medium heat.
- Add in the chopped leek and garlic.
- Cook until starting to soften and become fragrant.
- Add the chopped cauliflower, salt and pepper to taste.
- Cook for a few minutes then pour over the vegetable stock.
- Bring up to the boil, reduce to low heat and gently simmer for 25 to 30 minutes or until the vegetables have all softened.
- Remove from the heat, pour in the (optional) cream or sour cream and carefully blend with a stick blender or immersion blender to a silky texture.
- Pour into bowls and top with (optional) crumbled blue cheese. Store any cooled leftovers in an airtight container in the fridge and consume within a couple of days.
