Tuna And Spinach Burgers
Tuna is a delicious and nutritious (and frugal) ingredient which my family enjoys on a regular basis. I refer to this canned tuna guide to help select a tuna which is sustainable for the environment while being nourishing for my family.
I made these Tuna and Spinach Burgers using the Breadcrumbs I shared with you the other day.
These burgers are super easy to make – you simply mix all the ingredients together in a large bowl and then shape them into burgers. I find that at least half an hour in the fridge helps them to keep their shape when they cook. Here they are formed and ready to be cooked…
These Tuna and Spinach Burgers were a huge hit with the family. Even my oldest, who isn’t a tuna fan usually, loved them! The fact he was also enjoying spinach was just an added bonus!
Here’s the meal for the kids, along with cucumber and tomato sauce for dipping.
Tuna and Spinach Burgers
425g Tin Sustainably Caught Tuna, drained
1/2 Cup Breadcrumbs (How To Make Breadcrumbs)
2 Eggs
1/2 Cup Spinach, washed and finely chopped
1/2 Onion, peeled and finely grated
Salt and Pepper to taste
Coconut Oil, for frying (where to find coconut oil)
1. In a large bowl, combine together all of the ingredients except the coconut oil.
2. Form the mixture into 8 even tuna burgers and place on a plate.
3. Refrigerate for at least half an hour, this helps the burgers “set” and hold their shape when they are cooked.
4. Heat a little coconut oil in a large frying pan. When hot, carefully place the tuna burgers into the frying pan.
5. Cook for a few minutes and then turn the burgers over and cook until golden on both sides and cooked through.
Makes 8
You can serve the Tuna and Spinach Burgers on Burger Buns or with a side salad. My Husband and kids like their burgers with tomato sauce – I prefer mine with a dollop of sour cream.
