Gluten Free Date Cookies Recipe

These easy cookies only need 7 ingredients to come together to form a gluten free baked sweet treat.

I’ve been making these every few days lately and thought I’d share the deliciousness with you. (Also so that I have the recipe for myself to refer back to because I can see myself making these for my family for years to come!) 

You don’t even need to get out the electric mixer for the chewy cookie treat. All you need is a large mixing bowl and a wire whisk, or you could even use a wooden spoon to quickly combine all of the ingredients together.

You actually have a number of flour choices when it comes to baking gluten free cookies. In this instance, these easy cookies are made with coconut flour instead of all purpose flour. 

Coconut flour works perfectly in this recipe. If you haven’t worked with the ingredient before, you may think there’s a mistake that only a quarter of a cup is listed. Well, it’s no mistake.

You’ll find that coconut flour is incredibly absorbent and just a quarter of a cup does the job a gluten free flour does in baking. It binds the cookies, holding them together in perfect cookie form.

Regarding the dates, use a half a cup to a whole cup, depending on how full of dates you want your cookies to be. 

Chewy dates are loaded with nutritious qualities including being naturally high in fiber and a variety of vitamins and minerals. (Source.)

The cookies come together really quickly – you simply melt the butter, pour it into a bowl then add in all of the remaining ingredients, one at a time, mixing well before adding in the next ingredients.

Then, it’s just a matter of dropping the batter onto the baking sheet or baking sheets, a tablespoon per cookie, before baking until perfectly golden.

Adjust The Cookie Recipe To Your Diet

Depending on your diet, here are some tips to adapt the recipe for you.

To make the cookies low carb or keto diet friendly, simply swap the coconut sugar for stevia or your sweetener of choice. And, swap the dates for sugar free chocolate chips or nuts for a chocolate chip or nutty cookie treat.

Regarding the sugar. I’ve gone for coconut sugar in these cookies and they create the best results, with a lovely golden brown color and rich flavor.

You can swap the sugar for maple syrup, honey, brown sugar, white sugar or your sweetness of choice. 

Ingredient ideas for date cookie recipe

You could also add in a half a cup of oats for gluten free oatmeal cookies, or add in a half a cup of pecans, almonds or walnuts for a nutty cookie treat.

If you’d like the cookies to be dairy free and paleo friendly simply swap the butter for a quarter of a cup of melted coconut oil. 

I’ve been working my way through the AIP Diet and have successfully introduced butter and eggs. But, not vanilla just yet so you can feel free to add in a teaspoon of vanilla to the cookies.

  • 100g Unsalted Butter
  • 1/3 Cup Coconut Sugar
  • 1 Large Egg 
  • 1/2 teaspoon Baking Soda
  • Pinch of Salt
  • 1/4 Cup Coconut Flour
  • 1/2 to 1 Cup Chopped Dates 
  1. Preheat the oven to 180C/350F and line a baking tray or cookie sheets with well greased baking parchment paper. 
  2. Melt the butter and then pour the melted butter mixture into a large bowl. 
  3. Whisk the coconut sugar into the melted butter. 
  4. Add the egg, baking powder and salt and whisk to combine.
  5. Stir the coconut flour through and give it a few minutes to thicken. (If needed, you can add an additional tablespoon or two of coconut flour to form a thickened cookie dough.) 
  6. Add the chopped dates and mix through until well combined. 
  7. Drop a teaspoon per cookie onto the prepared baking tray.
  8. Place into the preheated oven for 10 to 15 minutes or until golden and done. 
  9. Remove from the oven and allow to cool to harden slightly, then enjoy and keep stored in an airtight container or cookie jar.

These taste like a sweet date pudding – but in a cookie. As you can see, they are really easy to put together and are the perfect gluten free sweet treat.
