These Grain Free Coconut Flour Pancakes are an easy intro into the world of Unprocessed food – they are easy to make, include only nourishing, unprocessed ingredients and best of all they are versatile in how you can enjoy them and they just happen to be delicious too!

Coconut Flour is an interesting, and at times temperamental, flour to work with.

It has a beautifully rich coconut aroma, while being incredibly absorbent – a little goes a LONG way.

So, only 3 tablespoons is required in order to produce gorgeous, fluffy pancakes.

These pancakes are perfect on their own, or are neutral enough to be transformed into a sweet or savory dish depending on the topping you choose. (Click here for 20 Perfect Pancake Toppings)

I often spread avocado onto the pancakes and pop them in the kids lunch boxes (as I did below) while I’ve also enjoyed these as a breakfast treat topped with a little cream or butter! So you see, these pancakes are truly versatile & delicious!

Dairy Free Coconut Flour Pancakes Recipe

  1. In a large bowl whisk the eggs until smooth.
  2. Mix in the coconut flour and stir until smooth and thick.
  3. Heat the coconut oil in a large frying pan.
  4. When hot, carefully drop tablespoons of the pancake batter onto the coconut oil.
  5. When set, flip and cook the other side.
  6. Once both sides are golden and cooked through, remove from the frying pan.
