Coconut Flour is an interesting, and at times temperamental, flour to work with. It has a beautifully rich coconut aroma, while being incredibly absorbent – a little goes a LONG way. So, only 3 tablespoons is required in order to produce gorgeous, fluffy pancakes.

These pancakes are perfect on their own, or are neutral enough to be transformed into a sweet or savory dish depending on the topping you choose. (Click here for 20 Perfect Pancake Toppings)

I often spread avocado onto the pancakes and pop them in the kids lunch boxes (as I did below) while I’ve also enjoyed these as a breakfast treat topped with a little cream or butter! So you see, these pancakes are truly versatile & delicious!

Grain Free Coconut Flour Pancakes (GAPS, Paleo)



  1. In a large bowl whisk the eggs until smooth.
  2. Mix in the coconut flour and stir until smooth and thick.
  3. Heat the coconut oil in a large frying pan.
  4. When hot, carefully drop tablespoons of the pancake batter onto the coconut oil.
  5. When set, flip and cook the other side.
  6. Once both sides are golden and cooked through, remove from the frying pan.

  4. I’ve been trying to make coconut flour pancakes for about a year and this is the first recipe I’ve gotten to work. Normally it would take me 15-20 minutes to cook cakes that would fall apart. These cooked much faster and came out fluffy. Who’d knew it’d be so simple?

    I decided to try these since I am out of bananas , which I usually use.
    I am allergic to all grains, so I’ve been cooking with coconut flour exclusively.
    The problem with most people is that they expect it to act and tast like wheat. If you get that concept out of your mind coconut flour is much more pleasent.
    I haved the receipe since I am not a big eater,and added honey since pancakes are supposed to be a little sweet.
    2 eggs
    1and1/2 tlbs coconut flour
    1 teaspoon honey
    Makes 2

    This is such a simple recipe! They turned out well and we added blueberries & walnut pieces to a few of them. YUM!!

  8. Love this every time! I doubled it and added an extra tbsp of flour to get it the right thickness. I normally add a little vanilla and cinnamon. It’s so good with a few Enjoy life chocolate chips too. 🙂

  10. I added apple and shredded coconut, a pinch of nutmeg and cinnamon . With fresh maple syrup. Excellent.

  11. Just made these pancakes and I was really surprised how yummy they were. I only used 3 eggs since they were extra large and added a couple of tablespoons of low fat milk to the batter, since I thought it was a little thick. Also added a little Swerve (love it) to sweeten it up. I added a few fresh blue berries just before I turned them. The recipe only made 5, but 2 were a great breakfast. Thanks for a great simple recipe.

  13. About to try these with a couple drops of lemon essential oil and some fresh picked blueberries! I like to pour the batter into muffin tins 1/3 full to make mini pancakes with no flipping needed 🙂 bake in oven at 350. Watch about 10 minutes.
