My family have been going CRAZY for this salad. Either I adore big rainbow salads, or I keep it monotone, enjoying as many vegetables of the same colour as possible. This is one of those salads. I adapted this recipe from Smitten Kitchen and included a delicious array of green ingredients and the salad is simply magical.
We love creamy salads and this salad includes just the perfect level of creaminess to complement the other salad ingredients. (Watch for more ingredient adaptation ideas in the video below)
This is our favourite combination of ingredients, but feel free to adapt it to your own personal tastes – mix up the included cheese or green ingredients, totally up to you.

Cucumber Avocado Salad Recipe
- 2 Cups Spinach
- 1 Cucumber, chopped
- 1 Avocado
- 50g/1.76oz Goats Cheese or Feta Cheese
- 1/2 Lime
- 1/4 Cup Sour Cream
- Handful of chopped chives
- Salt & Pepper, to taste
- Get out a large salad bowl and add the spinach to create a bed of salad greens.
- Add in the chopped cucumber and avocado, toss well to combine.
- Crumble over the goats cheese or feta cheese, squeeze over the juice of the lime and pour over the sour cream, then stir through until fully combined together.
- Sprinkle over the chopped chives and add a few shakes of salt and pepper, to taste.
- Serve straight away or move to the fridge for a few hours or overnight and enjoy within a couple of days.
