Cauliflower is really such a magical, versatile low carb vegetable. Here are 5 easy, delicious low carb, keto diet friendly ways to enjoy cauliflower. Feel free to mix and match the recipes to suit your tastes and dietary requirements:
1. Creamy Mushroom Risotto
Tastes like the real thing and super simple to prepare, all you do is use already riced cauliflower or grate a head of cauliflower into rice.
Then, heat olive oil, coconut oil or butter in a frying pan and cook onion, garlic, mushrooms and any other vegetables you like until almost done.
Add in the riced cauliflower, along with your liquid of choice from almond milk, cream or chicken stock and cook until you have the perfectly cooked low carb friendly risotto. Top with grated sharp cheddar or lots of cheese for a cauliflower cheese risotto with a fraction of the carbs when compared to regular rice.

2. One Pan Keto Cauliflower Mac and Cheese
Super cheesy and actually tastes like mac and cheese, yet is completely low carb! It’s made in just one pan and ready in minutes, so you could be enjoying this dish in no time!
The cheese sauce includes mascarpone, heavy cream and grated cheese, but you can also add in sour cream, parmesan cheese or any other creamy or cheesy ingredients you like.
You can add in more simple ingredients such as crispy bacon, green onions, fresh herbs, onion powder, garlic powder, salt, black pepper or any other seasoning you like.

3. Garlic Mashed Cauliflower
This flavorful version of mashed cauliflower makes the perfect keto side dish, which our family actually prefers to traditional carb loaded mashed potatoes. (Where to find a potato masher!)
Simply pop chopped raw cauliflower and garlic cloves into a large saucepan, cover with water and plenty of salt and pepper to taste, then bring up to the boil on the stove top over high heat.
Reduce to low heat and cook until the cauliflower is easily mashable. Then it’s just a matter of mashing the cauliflower, garlic and creamy ingredients of choice until smooth and creamy.
You can adapt your cauliflower mash by incorporating your creamy ingredient of choice. Choose from heavy whipping cream, sour cream or cream cheese. Or, make a cheesy cauliflower mash by mixing as much cheese as you like through the creamy mash.

4. Turmeric Cauliflower Rice
All you need is a box grater to make a healthy portion of nourishing turmeric cauliflower rice, the next recipe in this collection of low carb cauliflower recipes.

You simply saute chopped cauliflower florets in butter, olive oil or coconut oil, along with onion and garlic until golden brown, then add in leftover corned beef to create a final dish that’s hearty and full of flavor.
