Keto Lemon Curd Recipe

I’ve always had a love for all things lemon and this luscious lemon curd is wonderfully rich with 3 eggs, butter and two lemons – making it the ultimate lemon dessert that’s low in net carbs.

Most lemon curd recipes call for a mixture of whole eggs or even egg yolks only, but I find that 3 whole eggs results in a perfectly authentic lemon curd. (Without the need to find a use for the leftover egg whites!)

For this low carb lemon curd, you can feel free to add more stevia, or your low carb sweetener of choice, to taste. You may find the sugar free lemon curd recipeto be a little sour by following the recipe card. But then I usually enjoy it with whipped cream or mixed through plain natural yoghurt, where I add a touch more stevia if I feel the need.

Lemon mousse

Make a dairy-free lemon curd by swapping the butter for a dairy free alternative or even coconut oil. You can feel free to swap the lemons in the easy recipe for limes to make a lime curd, if that’s what your taste buds are craving. Another option is to mix through xanthan gum to help the best sugar-free lemon curd thicken.

The traditional lemon curd can be used to fill lemon curd tarts, lemon meringue pie or simply mixed through plain yogurt or ice cream which is sure to please any lemon lover.

Or, make a delicious keto lemon mousse or lemon cheesecake mousse by folding the homemade lemon curd through whipped cream and cream cheese.

Keto Lemon Curd Recipe

  • 3 Eggs
  • 1/4 Cup Stevia
  • 2 Fresh Lemons
  • 50g/1.75 Ounces Unsalted Butter, chopped into cubes
  1. In a small saucepan, whisk the eggs and stevia together until smooth.
  2. Grate the zest from the lemons over the eggs, then slice in half and squeeze the lemon juice into the saucepan and over a sieve to catch any pips.
  3. Whisk until the lemon zest and juice is well incorporated.
  4. Add the cubed butter and place the saucepan over the lowest heat and cook, whisking continuously until the curd thickens and coats the back of a spoon.
  5. Remove from the heat as soon as it’s done. Allow to cool completely to room temperature to thicken even further and store in the fridge, ideally in an airtight container such as mason jars.
