Baked Cauliflower Mash

I have a weakness for all things cauliflower mash. There are just so many yummy varieties to choose from that are low carb and keto diet friendly, though this is my latest favourite.

 

I adapted the recipe from a recipe in Simply Nigella for Make Ahead Mash. I’ve swapped out the carby potatoes for low carb cauliflower and it’s just soooo good that you won’t miss the potatoes at all!

This is such a handy dish to have in your keto arsenal. You simply prepare your favourite cauliflower mash recipe, pop it into an ovenproof dish and top it with Parmesan cheese or your cheese of choice.

And the best part? You don’t have to cook it straight away! Meaning you can lovingly prepare your baked cauliflower mash, allow it to cool and place it in the fridge to bake when you need it.

This would be perfect for Thanksgiving, Christmas or when you’re entertaining as it’s one more side dish that you can serve that requires zero prep on the day – just moving it from the fridge into a preheated oven.

As I’ve mentioned, you can cook your favourite cauliflower mash to transform into baked cauliflower. If you want to keep it simple, I’ve included an easy cauliflower mash recipe below.

Low Carb Baked Cauliflower Mash Recipe

  • 1 Head of Cauliflower
  • Butter
  • Cream
  • Salt & Pepper to taste
  • Parmesan or your Cheese of Choice
  1. Prepare the cauliflower mash by chopping the head of cauliflower, placing it into a large saucepan and covering it with water.
  2. Bring up to the boil and simmer until easily mashable.
  3. Drain and mash, together with the butter, cream, salt and pepper to taste.
  4. Move the cauliflower mash into an oven proof dish. You can either bake straight away or allow to cool and then refrigerate overnight to bake the next day.
  5. When ready to bake, preheat the oven to 180C/350F and top the cauliflower mash with grated parmesan or your cheese of choice.
  6. Bake for 30 to 40 minutes or until golden and cooked to your liking.

Ingredients

  • 1 Head of Cauliflower
  • Butter
  • Cream
  • Salt & Pepper to taste
  • Parmesan or your Cheese of Choice
