Now that I’ve been intermittent fasting for a little while, I’ve really gotten into the habit of having massive breakfasts, full of as many vegetables as I can fit in and then a lunch/dinner combo meal later in the day.
This low carb pumpkin breakfast hash has almost a days worth of vegetables in one big bowl full. It smells wonderful cooking and truly is one of the best low carb pumpkin recipes.
Low Carb Pumpkin Breakfast Hash Recipe
- Pumpkin
- Broccoli
- Eggs
- Butter or Coconut Oil, for frying
- Chop the pumpkin and broccoli into bite sized pieces.
- Melt butter or coconut oil in a large frying pan.
- When hot, add the pumpkin and broccoli.
- Cook, tossing often and adding more butter as need, until browned and almost cooked to your liking.
- Make space in the frying pan and crack over 2-3 eggs per person.
- Cook until done to your liking and serve.
