I’m writing this in the midst of moving out of the house I’ve lived in for the previous 7 years. The house that my Kids have grown up in and this blog has been written in since the very beginning over 5 years ago.

So, this is the last blog post that’s being shared from my “old house”. (As I now call it!) And so, as you can tell, I’ve been experiencing tons of nostalgia lately. (And sore muscles from moving more boxes and furniture around than I can ever remember!)

We are in an apartment for the next month until we leave Australia for our big journey to Ireland and getting used to a new kitchen is fun, yet challenging.

I’ll probably be comfortable by the time we move out, but that’s ok – because soon we will be in the country we’ve been yearning to be in for years and these little frustrations are all a part of moving.

How To Make Keto Cauliflower Rice Breakfast Bowl

It’s been hard trying to stay on Keto track while moving and my whole world has been turned upside down. Simple meals like this have helped heaps.

I totally “cheated” and bought ready riced cauliflower because I knew dealing with a whole head of cauliflower would just not be possible. Feel free to grate your own though! As an aside, this is also the last blog post with my marbled bench tops…

To make the dish, you’ll need:

  • Riced Cauliflower
  • More Low Carb Chopped Vegetables (I used asparagus)
  • Egg
  • Butter or Coconut Oil, for frying

Cook your cauliflower rice and chopped vegetables in heaps of butter or coconut oil.

Saute until done to your liking, adding more butter or coconut oil if you think it needs it.

Move the cooked cauliflower rice and vegetables into a bowl.

You could enjoy as is or topped with a fried egg and your seasoning of choice, or even Parmesan.

Keto Cauliflower Rice Breakfast Bowl

Ingredients

  • Riced Cauliflower
  • More Low Carb Chopped Vegetables I used asparagus
  • Egg
  • Butter or Coconut Oil for frying

Instructions

  1. Cook your cauliflower rice and chopped vegetables in heaps of butter or coconut oil until cooked to your liking.
  2. Serve into bowls and top with a fried egg and your seasoning of choice, or even Parmesan.
