Green Shakshuka Recipe

When you’re feeling like a big, green breakfast, this Green Shakshuka Recipe is perfect. It’s full of nutrient dense green vegetables and nourishing eggs.

A traditional Shakshuka usually has tomatoes, but being high in carbs a green shakshuka is a lower carb alternative, which makes a delicious big breakfast.

You can mix and match green ingredients to create your own tailor made Shakshuka. Here are some ideas for you:

  • Cabbage
  • Brussels Sprouts
  • Broccoli
  • Kale
  • Spinach
  • Zucchini
  • Green Beans
  • Lettuce
  • Snow Peas
  • Bok Choy
  • Asparagus

You could also enjoy green peppers or leeks, in smaller quantities as they are higher in carbs than the above listed vegetables.

Green Shakshuka in a frying pan

I went for Zucchini and spinach in this instance and chose to also include garlic and feta for flavour. Feel free to mix and match ingredients and omit the feta if you’d prefer a dairy free breakfast. Or, you could swap the Feta for Parmesan or another cheese option.

See – the options are endless! I haven’t specified exact quantities because it depends how many people you’re making your shakshuka for and how hungry they are. In my case, I used 1 zucchini, 3 garlic cloves, 2 handfuls of spinach and 5 eggs for myself and my Husband for the perfect Keto Breakfast.

Green Shakshuka Recipe

  • Zucchini, Chopped
  • Garlic, Peeled and Chopped
  • Salt, pepper or seasoning to taste
  • Spinach
  • Eggs
  • Feta
  • Butter or coconut oil, for frying
  1. Melt butter or coconut oil in a frying pan.
  2. When melted and the pan is hot, cook the zucchini, adding more butter or coconut oil as needed.
  3. When starting to brown, add the chopped garlic, salt, pepper and seasoning.
  4. Once the zucchini is almost cooked, add a couple of handfuls of spinach.
  5. Toss to wilt and then make gaps amongst the vegetables, dotting the gaps with butter or coconut oil if needed.
  6. Crack the eggs into the gaps between the vegetables.
  7. Crumble over Feta.
  8. Cook until done to your liking.
  9. Serve and enjoy.

Ingredients

  • Zucchini, Chopped
