The cooler weather has begun here in Ireland and I’m in serious Keto comfort food making mode. I’ve made this Keto Beef Stew With Broccoli twice in the past week, so I just had to make it again to share the delicious simplicity with you – and because my entire family can’t get enough of it.

For best results, ideally, use the fattiest beef you can find at your local grocery store, so that your stew will be low carb and high fat.

One of the times I found beautifully marbled beef, but on this instance it was a little leaner than I would have liked. So, I made sure to cook the beef in plenty of butter to raise the fat levels in the easy keto recipe.

How To Make Low Carb Beef Stew

The best part is that all the simple ingredients for the delicious keto beef stew are thrown into a large pot on the stove and then cooked until tender. 

I like to brown the onion and garlic first, then add in the beef to brown, so that all of the ingredients become packed full of flavor. You may need to brown the beef in batches, as they cook best in a single layer.

The broccoli can be added when adding in the stock of broth or for the last half hour of cooking, depending on the texture you’d like your vegetables to be, along with your delicious tender beef. I’ve used fresh broccoli florets, but you can feel free to use frozen broccoli instead if you like. 

The total cook time for the delicious beef broccoli stew will vary depending on the exact cut of beef you use, whether it’s thin-sliced beef, sliced skirt steak, flank steak, chuck roast or a chunkier cut of meat, and how long it takes to become perfectly tender.  

You could just as easily make the delicious meal in your slow cooker or pressure cooker, following the directions of your device to create the perfect broccoli beef meal for busy weeknights. 

The Simple Ingredients In The Easy Dinner

You can feel free to mix up the vegetables and include other low carb veggies in your hearty Keto Beef Stew like mushrooms, green beans, bell pepper or cauliflower. Or, you could include small amounts of carby vegetables like carrots to enjoy traditional stew flavors without the high carb levels.

Regarding the keto diet friendly ingredients volumes – it really depends on how much you’d like to make and the carb count you’d like to include in your Keto Beef Stew.

Onion and garlic are higher in carbs than other vegetables, so use a small amount for less carbs or be more generous if you’d like to have a more carby stew.  For seasoning, you can add in salt, black pepper and any other flavor you like such as Italian seasoning, bay leaves, red pepper flakes or fresh thyme. 

Use stock, beef broth, homemade bone broth, chicken broth or cold water, or a mixture, to bring flavor to your stew. You can add enough liquid to just cover the stew or add more for a more soupy end dish.

Feel free to also add in a little bit of tomato paste, Worcestershire sauce, soy sauce, coconut aminos or red wine vinegar to add a ton of flavor to the keto stew.

  • Diced Onion
  • Diced Garlic
  • Diced Beef Stew Meat
  • Salt, Pepper or Seasoning to taste
  • Chopped Fresh Broccoli Florets
  • Stock or Water
  • Butter, Olive Oil, Sesame Oil or Coconut Oil, for cooking
  1. Heat butter, olive oil, sesame oil or coconut oil in a saucepan on the stove top over medium heat.
  2. When hot, add the onion and garlic and cook until starting to brown, stirring regularly to ensure nothing sticks to the bottom of the pot.
  3. Add the diced beef in a single layer, seasoning and cook until browned on all sides, adding in more oil or butter if needed. You may need to cook the chunks of beef in batches, moving the brown bits to a plate and cooking until all of the meat had browned all over.
  4. Add the broccoli now to the browned bits for soft and falling apart broccoli or half an hour before you’re ready to serve for a firmer vegetable.
  5. Pour the stock or water over the rest of the ingredients to cover.
  6. Bring up to the boil, reduce the heat and simmer for a cooking time of 1.5 to 2 hours or until the meat is tender.
  7. Serve the hearty stew as is or with a low carb side like cauliflower rice or cauliflower mash. Store any leftovers that have cooled to room temperature in an airtight container and enjoy within a couple of days.
