I’d always thought that a fluffy souffle was a tricky dessert to master. So, I hadn’t given it a second thought until recently. With the weather getting cooler, I’ve been craving warming desserts. 

So, I thought I’d look up a couple of flourless chocolate soufflé recipes, watch a couple of video tutorials to discover what the classic French dessert is all about. 

Low Carb Chocolate Souffle Recipe

Turns out – a chocolate soufflé doesn’t have to be tricky or complicated. Yes, mine don’t look perfect – but they deliver exactly what I want – a warming, gooey chocolate dessert that soothes the soul through chilly days. 

A word about the simple ingredients – use the absolute darkest bittersweet chocolate you can for a super rich dark chocolate dessert.

The higher the percentage, the lower the carbs and sugars, so if you want the dessert to be low carb and keto lifestyle friendly, just use 85%, 90% or higher sugar free chocolate.

Use a chocolate bar that you chop into small pieces or chocolate chips to make the dessert prep super quick.

Ingredients you'll need

For the cream in the recipe, use heavy cream, double cream, or whipping cream to help the chocolate melt and create a creamy batter with lots of good fat.

You can choose whatever sugar or alternative that you usually enjoy. So, you could use stevia, monk fruit sweetener, erythritol or you sugar alternative of choice to create keto soufflés that are sugar free.

When melting the chocolate, if you find the mixture is too thick, you can add a couple more tablespoons of cream or even milk to smooth. 

How to make an easy homemade dark chocolate pudding

The ramekins can be popped onto a baking sheet to make them easy to transport to the oven and then out of the oven door without any spillage.

You can enhance the sweet flavor of the simple dessert by mixing a pinch of salt, espresso powder or vanilla extract through the easy chocolate soufflé recipe batter.

You can serve the easy recipe as is or topped with a sprinkling of cocoa powder, fresh berries, scoop of ice cream or whipped cream as a great way to enjoy the gluten free dessert.

Easy Chocolate Souffle Recipe

  • 100g Unsweetened Chocolate, chopped or chocolate chips
  • 2 Tablespoons Cream
  • 4 Eggs, separated
  • 1/4 Sugar, Stevia or your sweetener of choice
  1. Preheat the oven to 200C/400F, get out 4 ramekins and grease really well with unsalted butter. 
  2. Melt the chocolate using the double boiler method by placing a heatproof bowl above a small saucepan of simmering water on the stove top, without touching, add the chocolate and cream and stir until gently melted. 
  3. Remove the hot cream and melted chocolate mixture from the heat and cool slightly. 
  4. Whisk the egg yolks into the chocolate mixture, one at a time. 
  5. In a separate mixing bowl, whisk the egg whites with an electric mixer on high speed, adding a tablespoon of sugar at a time to the large bowl as you go. 
  6. Whisk until thickened to stiff peaks then gently fold the soft peaks into the chocolate mixture, a quarter at a time until you’ve incorporated all of the remaining egg whites into the souffle batter. 
  7. Move the souffle mixture into the prepared ramekins, place into the oven and reduce the heat to 180C/350F. 
  8. Cook for 8 to 10 minutes baking time or until slightly risen. 
  9. Remove from the oven and enjoy warm. 

This is such an easy, decadent and impressive dessert to enjoy through cooler weather. My family adores it and I’m sure yours will enjoy the healthy treats too.
