Strawberries and cream are one of my go to low carb sweet treats. I regularly enjoy a bowl full and it satisfies my sweet tooth perfectly. These mascarpone stuffed strawberries take the dessert to a totally different level of decadence. 

 

There are a number of options when it comes to deciding how to fill your strawberries. You could use a melon baller to scoop a chunk out of the top or bottom of the strawberry to fill with your sweet stuffing.

Or, you could simply do what I did and cut the strawberry and half and then fill each half. It means you get to enjoy even more of the filling and it’s perfect if you’re anything like me and not quite so delicate at putting together dainty desserts.

When it comes to deciding what to fill your strawberries with, you have a number of delicious options. 

Here are some ideas for you: 

  • Cheesecake Stuffed Strawberries – swap the mascarpone in the below recipe for cream cheese instead and you can enjoy an indulgent strawberry cheesecake dessert. 
  • Chocolate Stuffed Strawberries – whip up just cream or choose to include cream or mascarpone and add in a tablespoon each of cocoa powder and stevia for chocolate stuffed strawberries. 
  • Whipped Cream Stuffed Strawberries – double the cream to a cup and opt for simple whipped cream stuffed strawberries.

Mascarpone Stuffed Strawberries Recipe

  • 1/2 Cup Heavy/Whipping Cream
  • 1/4 Cup Mascarpone
  • 1 Tablespoon Stevia (or your sugar/sweetener of choice) 
  • 1/2 teaspoon Vanilla Essence
  • Strawberries
  1. In a bowl, whisk the cream until thick. 
  2. Then, whisk in the mascarpone, stevia and vanilla until smooth. 
  3. Half the strawberries and scoop out a little bit to make it easy to fill with the mascarpone filling. 
  4. Fill each strawberry half with the mascarpone filling, place onto a plate and enjoy.
