A Caprese Salad With Cherry Tomatoes is the perfect low carb summer salad or keto bbq sides – especially when served with nutritious cauliflower in place of pasta in a pasta-like salad.

The flavours of Caprese include tomatoes, mozzarella and basil – and if you haven’t experienced the flavour combination yet, then you’re about to experience a classic ingredient pairing that will transport you to the Sunny Mediterranean.

Oh and if you’re like me and wondering about the actually pronunciation of “Caprese” then here’s how – “Kuh-Pray-Zee” is the correct way to pronounce the confusing salad name. (And yes, I completely, embarrassingly butcher the pronunciation in the recipe video!)

Here are some ideas for ingredients and dressings for your caprese salad:

  • Tomatoes – you can go for cherry tomatoes, as I have done, or whole tomatoes instead and use a single colour or multi-coloured tomato varieties
  • Mozarella – there’s the whole mozarella or the smaller bocconcini type mozarella balls, you could also include a soft goats cheese or another cheese as well for a multi cheese Caprese salad
  • Greens – mix through or serve on a bed of spinach, lettuce or kale
  • Basil – fresh basil is the classic way but you could also include a basil pesto instead

Caprese Salad - low carb cauliflower

  • Cauliflower or Pasta – cooked cauliflower or pasta will create a low or high carb dish, depending on your preference
  • More Vegetable Ideas – peppers, onion, garlic – fresh, fried or roasted
  • Seasoning – season with salt, pepper or any other seasoning, herb or spice to taste
  • Dressing Ideas – either one of or a combination of: Extra Virgin Olive Oil, Balsamic Vinegar, Lemon Zest/Juice, Pesto

Easy caprese salad recipe for a crowd - low carb with cauliflower

Caprese Salad With Cherry Tomatoes Recipe

  • 1 Head of Cauliflower
  • Cherry Tomatoes
  • Mozarella
  • Basil Leaves
  • Extra Virgin Olive Oil or Balsamic Vinegar
  • Salt & Pepper, to taste
  1. Chop the cauliflower into bite sized florets, place into a saucepan, cover with water and place over heat to bring up to the boil.
  2. Bubble for 5 to 10 minutes or until the cauliflower is just soft enough to bite in to.
  3. Drain and cool the cauliflower then move to a serving dish.
  4. Half the cherry tomatoes and scatter over the cauliflower.
  5. Chop the mozarella and basil into bite sized pieces and add to the salad.
  6. Drizzle over a couple of tablespoons of either extra virgin olive oil or balsamic vinegar.
  7. Add salt and pepper, to taste and serve.

Easy Low Carb Summer Salad Idea.

Ingredients

  • 1 Head of Cauliflower

  • Mozarella
