Low Carb No Churn Chocolate Recipe

Since moving to Ireland, I have yet to acquire an ice cream maker. So, when I felt like making homemade ice cream recently, I turned to google to find a no churn recipe.

Most no churn ice cream recipes include condensed milk – a high sugar, low carb no no. So, I kept looking and found this recipe from Mary Berry. It simply needed eggs, cream and sugar – making it easy to adapt and create a low carb version. 

I decided to take the recipe a step further and make it a chocolate rather than vanilla recipe. Because – everything is better with chocolate! 

How to Make No Churn Low Carb Chocolate Ice Cream

This recipe is similar to a rich chocolate mousse – only frozen into a rich, creamy ice cream.

To make the ice cream, separate the eggs and whisk the whites and sugar until thickened. Then, whisk the cream with the cocoa powder, before folding the yolks and chocolate cream into the whisked egg whites. 

Freeze your chocolate ice cream for a few hours and then enjoy. 

Important note – There are raw eggs in this recipe, pick fresh eggs from a source you trust and avoid serving to those who are pregnant, elderly or have weakened immunity.

Low Carb No Churn Chocolate Ice Cream Recipe

  • 4 Eggs, Separated
  • 1/2 Cup Stevia
  • 1 Cup Heavy/Double/Whipping Cream
  • 1/4 Cup Cocoa Powder
  1. In a bowl, whisk the egg whites until thick then whisk in the stevia until thickened and smooth. 
  2. Pour the cream into a second bowl and whisk until thickened.
  3. Whisk in the cocoa powder until completely incorporated. 
  4. Fold the chocolate cream mixture and the egg yolks into the whipped egg whites until you have a smooth ice cream mixture. 
  5. Pour the ice cream into a freezer safe container. 
  6. Place into the freezer for at least 2 hours to harden and then enjoy.

This ice cream is rich, creamy and so wonderfully easy to make when you don’t have an ice cream maker.

You can enjoy the low carb chocolate ice cream by the bowl full, in smoothies or shakes or even sandwich two chocolate cookies (like this) together with the ice cream for low carb ice cream sandwiches.
