Mushroom Stir Fry Recipe
Since sharing the green vegetable stir fry a couple of weeks ago, I’ve been experimenting with other low carb, keto vegetarian stir fry recipes. This Mushroom Stir Fry Recipe is my best yet.
I used a variety of bigger portobello mushrooms and smaller cup, button mushrooms. You can use whatever mushrooms you like in this stir fry.You can also add in other vegetables and ingredients, here are some ideas that would go wonderfully in this stir fry:
- Onion
- Garlic
- Ginger
- Cauliflower
- Broccoli
- Broccolini
- Spinach
- Kale
- Bok Choy/Pak Choy
- Green Beans
- Snow Peas or Sugar Snap Peas
- Peppers
- Zucchini
- Nuts & Seeds – cashews, almonds, sesame seeds, pine nuts
Low Carb Stir Fry Sides
If you’re following a low carb or keto diet, then here are some ideas for lower carb sides to enjoy with your stir fry:
- Cauliflower rice – either store bought or you can easily make it yourself by grating cauliflower
- Cauliflower mash – boil up cauliflower and then mash with cream, butter and salt
- Zucchini noodles – use a spiralizer to make zucchini noodles to enjoy with your stir fry
- Cabbage noodles – chop cabbage into noodles and fry along with the vegetables
Mushroom Stir Fry Recipe
- 500g/1.1lbs Mixed Chopped Mushrooms – Portobello, Cup, Button
- 2-3 Garlic Cloves, peeled and chopped
- 1-2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Sesame Oil
- 1 Tablespoon Tamari/Soy Sauce
- Flaked Almonds
- Heat the olive oil in a frying pan.
- When hot, add the chopped mushrooms and garlic.
- Cook until the mushrooms have significantly reduced.
- Add the sesame oil and tamari or soy sauce, stir through and cook until the stir fry is cooked to your liking.
- Move to bowls and sprinkle over flaked almonds.
This mushroom stir fry is delicious as is or you could also enjoy it with a low carb friendly side such as cauliflower rice or zucchini noodles.

- 500g/1.1lbs Mixed Chopped Mushrooms - Portobello, Cup, Button
- 2-3 Garlic Cloves, peeled and chopped
- 1-2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Sesame Oil
- 1 Tablespoon Tamari/Soy Sauce

Instructions
- Heat the olive oil in a frying pan.
- When hot, add the chopped mushrooms and garlic.
- Cook until the mushrooms have significantly reduced.
