Lately I’ve been enjoying a soup of some kind almost daily as my dinner. And, this creamy broccoli and mushroom soup recipe has been one of my favorites.

It’s thick, creamy and full of flavor. The cream and butter bring healthy fats to the soup and make it into a meal which keeps me full for the rest of the day.

How To Make Mushroom and Broccoli Soup

To make this simple soup, start by softening chopped onion and garlic in coconut oil or butter. Use as much as you like for flavor and depending on how many carbs you want to allocate to the soup.

Then, chop the mushrooms and broccoli and add them to the saucepan. It’s up to you if you want to have it 50/50 mushrooms and broccoli or have more of one or the other.

I prefer mine heavier on the mushrooms side and with a smaller portion of broccoli. So, my version is more of a creamy mushroom soup with a healthy dose of broccoli thrown in.

Cover the vegetables with liquid. You can use water, stock, coconut milk or almond milk for this. As there’s so much flavor from all of the vegetables I’ve just been using water only.

Allow the soup to bubble away until the vegetables are soft and the soup is easy to blend. That takes about 15-20 minutes.

Blend the soup with plenty of butter and cream, then serve and enjoy. The secret to a super creamy soup is just using more butter and cream than you intend to use!

Well at least that’s the advice I got from a local restaurant here in Ireland and since adding more cream and butter to soups than I would have added in the past my soups have been luxuriously creamy – just like in this creamy broccoli and mushroom soup recipe.

Broccoli and Mushroom Soup Recipe

  • 1/2 to 1 Onion
  • 2-3 Garlic Cloves
  • 1/2 to 1 Head of Broccoli
  • 250g to 500g/half to 1 lb Mushrooms
  • Liquid to cover – stock, water, coconut milk or almond milk
  • Cream
  • Butter
  • Coconut oil or butter, for cooking
  1. Melt coconut oil or butter in a saucepan.
  2. Peel and chop the onion and garlic and add to the heated saucepan to soften.
  3. Chop the broccoli and mushrooms and add to the softened onion and garlic.
  4. Toss to coat in the saucepan flavors.
  5. Pour over liquid to cover and bring up to the boil.
  6. Lower the heat and simmer for 15 to 20 minutes or until the vegetables are soft and the soup is easy to blend.
  7. Remove from the heat, add plenty of cream and butter.
  8. Blend until smooth, serve and enjoy.
