Easy Raspberry Mousse Recipe Without Gelatin

This easy raspberry mousse recipe without gelatin has just 3 ingredients and is a creamy, dreamy dessert that comes together with very little effort.

I’ve used a bag of frozen raspberries in this instance, but you can feel free to make it using a bounty of fresh berries instead. (You’ll also love my 4 ingredient raspberry cheesecake mousse made with fresh raspberries.)

The bag that I used was 350g/12.3oz in size, you can use a smaller or bigger bag and then just add more or less sugar, accordingly.

I adore this mousse as it is, light and creamy. If you’d prefer it to be firmer set, then add 2 to 3 teaspoons of gelatin when you add in the sugar.

Mashing the puree

If you’d like a smooth mousse, then you can blend and strain the raspberry puree so that it’s completely sooth.

We prefer the little bits of raspberries so I just use a potato masher to mash any lingering larger pieces of berry.

Regarding the sugar, I’ve simply used caster sugar in this recipe, but you can use stevia or your sweetener or sugar of choice, instead.

For the cream, you can use heavy, whipping, double or any cream that you can whip into luxurious whipped cream.

Why This Raspberry Mousse Doesn’t Need Gelatin

Many raspberry mousse recipes rely on gelatin for structure. This recipe uses whipped cream to create a naturally light and airy texture, making it quicker to prepare while still delivering a delicious mousse-like consistency.

Ingredient Notes

Raspberries

Frozen raspberries work beautifully and are often more affordable than fresh berries. Fresh raspberries can also be used.

Sugar

Caster sugar dissolves easily, but granulated sugar or a sweetener alternative can be substituted.

Cream

Heavy cream, whipping cream or double cream all work well provided they can be whipped to stiff peaks.

Recipe Tips

Cool The Raspberry Puree Completely

Warm puree will melt the whipped cream and prevent the mousse from becoming light and fluffy.

Don’t Overwhip The Cream

Whip until soft to medium peaks form. Overwhipped cream can give the mousse a grainy texture.

Taste Before Adding All Of The Sugar

Raspberries can vary tremendously in sweetness and tartness. Start with a smaller amount of sugar and add more sugar until perfectly sweet to your liking.

For An Ultra Smooth Texture

Blend the raspberry mixture and strain it through a fine mesh sieve before folding into the whipped cream.

Chill Before Serving

Allow at least 2 to 4 hours in the refrigerator for the best texture and dessert bursting with berry flavor.

Storage

  • Store the raspberry mousse without gelatin covered in the refrigerator for up to 3 days.
  • The mousse is best enjoyed fresh but can be made a day ahead for parties and special occasions.
  • Freezing is not recommended as the texture may change once thawed.
