Low Carb Green Vegetable Stir Fry Recipe
This stir fry is a great way to enjoy a generous portion of greens. You can use the same greens I’ve used or use whatever greens (or vegetables) you like that are in season wherever you are.
With spring vegetables everywhere at the moment, I couldn’t resist popping them into this low carb greem vegetable stir fry. You can serve your stir fry with with cauliflower rice, zucchini noodles or just enjoy by the bowl full.
Low Carb Stir Fry Vegetables
Here are some ideas for vegetables to include in your low carb stir fry:
- Garlic
- Ginger
- Onion or Spring Onion
- Bok Choy or Pak Choy
- Spinach, Kale or other leafy greens
- Green Beans
- Snow Peas
- Sugar Snap Peas
- Broccoli or Broccolini
- Cauliflower
- Mushrooms
Low Carb Green Vegetable Stir Fry Recipe
- 1-2 Tablespoons Extra Virgin Olive Oil
- 2-3 Garlic Cloves, Peeled and Chopped
- 1 Bunch of Broccolini or Chopped Broccoli
- 1 Bunch of Pak Choy or Bok Choy
- Snow Peas or Sugar Snap Peas
- 1 teaspoon Sesame Oil
- 1 Tablespoon Tamari/Soy Sauce
- Cashews or Sesame Seeds
- Chop all of the vegetables into bite sized pieces.
- Heat extra virgin olive oil in a frying pan or wok.
- When hot, add the garlic and cook for a couple of minutes, until starting to brown and become fragrant.
- Add the chopped broccolini and cook for a minute.
- Add the pak choy and peas, cook until all of the veggies are starting to soften.
- Drizzle over the sesame oil and tamari/soy sauce.
- Cook until the vegetables have softened to your liking.
- Move to a plate, top with cashews or sesame seeds and serve.
This is such a wonderfully flavourful meal, packed full of nutritious vegetables that you can easily adapt to suit your tastes.

- 1-2 Tablespoons Extra Virgin Olive Oil

- 1 Bunch of Broccolini or Chopped Broccoli
- 1 Bunch of Pak Choy or Bok Choy
- Snow Peas or Sugar Snap Peas
- 1 teaspoon Sesame Oil
- 1 Tablespoon Tamari/Soy Sauce
- Cashews or Sesame Seeds
Instructions
- Chop all of the vegetables into bite sized pieces.
