Parmesan Salad Recipe

This recipe is inspired by a Parmesan and Celery Recipe I saw on a Barefoot Contessa, Ina Garten show. I adapated the recipe to our tastes (my Husband isn’t a fan of celery).

 

Now, it’s a delicious keto salad that I’ve enjoyed a few times this week and is now one of my all time favourite low carb salads. The flavours work so well together in this perfectly balanced salad.

Low Carb Salad Ingredients

You can adapt this recipe to include other low carb ingredients including:

  • Greens of choice – kale, spinach, celery
  • Nuts of choice – you can include walnuts, pine nuts or almonds – you could even saute them briefly in a frying pan for a crispy texture
  • Dressing – I opted for lemon and olive oil, but feel free to enjoy your favourite low carb salad dressing instead
  • Parmesan – you could shave the Parmesan off a blog of cheese or buy already shaved instead

Parmesan Salad Recipe

Adapted from Ina Garten TV Show

  • Spinach
  • Shaved Parmigiano Reggiano
  • Salt & Pepper, to taste
  • Extra Virgin Olive Oil
  • Lemon
  1. Wash the spinach and place into a bowl.
  2. Top with shave Parmigiano.
  3. Add a few shakes of salt and pepper to taste.
  4. Drizzle over a couple of tablespoons of olive oil.
  5. Grate the lemon zest over the salad and squeeze half of the lemon over a sieve to catch pips.
  6. Toss to combine, place in the fridge for a few hours for the flavours to develop and enjoy.
