Low Carb Roasted Cauliflower Salad Recipe

This easy Roasted Cauliflower Salad has just a few ingredients, but each one packs a flavour punch. You can mix and match the ingredients to suit your macros and ingredients you have available near you.

As you’ll see, salads are not just for Summer – this is great as a warming meal on a chilly winter’s day. (Or, you could also enjoy the salad chilled from the fridge too.)

Ingredients for roasted cauliflower salad

To construct the salad, you start by roasting the cauliflower in salt and olive oil. While the cauliflower is roasting, you slowly caramelise sliced red onion.

Include as much or as little onion as you like, bearing in mind that a whole red onion has about 11.5 Net Carbs. So, if you’d prefer to only include a quarter or a half an onion then that’s up to you.

To finish off the salad, you can drizzle over your favourite low carb, high fat salad dressing or your dressing of choice. A simple lemon vinaigrette (like this one) would work well and then, finally, crumble over some feta or goats cheese for the perfect Low Carb Roasted Cauliflower Salad.

  • 1 Head of Cauliflower
  • 2-3 Tablespoons Extra Virgin Olive Oil
  • Salt & Pepper, to taste
  • Butter, for frying
  • 1/2 to 1 Peeled and Sliced Red Onion
  • Feta or Goats Cheese
  • Salad Dressing of Choice
  1. Preheat the oven to 180C/350F and get out a baking dish.
  2. Chop the cauliflower into bite sized pieces and place into the baking dish.
  3. Drizzle over the olive oil and add a few shakes or salt and pepper to taste.
  4. Place into the preheated oven for 25 to 30 minutes, or until golden and cooked to your liking.
  5. While the cauliflower is in the oven, add butter to a frying pan and cook the red onions over a low heat.
  6. Cook the onions, adding more butter along the way when needed, until gently caramelised and softened.
  7. Once the cauliflower has cooked, remove from the oven, top with the onion and crumble over feta or goats cheese.
  8. Enjoy as is or topped with your salad dressing of choice, warmed or chilled from the fridge.
