Low Carb Vegetable Soup

Since aquiring a hand blender a couple of weeks ago, I’ve been creating a different Keto soup every other day. It’s been the perfect habit to get into with the chilly Ireland weather. (I recently shared a broccoli cheese soup which is another favourite.)

 

This combination of ingredients is one of my favourites. Simple, but tasty. Easy ingredient has a purpose and there are, of course, endless adaptations to make the soup even more flavoursome.

Here’s a list of vegetables that you can mix and match in your vegetable soup. The four ingredients I went for and my directions are listed in the recipe below. But, feel free to sub in your vegetables of choice.

  • Broccoli
  • Cauliflower
  • Asparagus
  • Mushrooms
  • Zucchini/Courgette
  • Onion
  • Garlic
  • Leek
  • Green Beans
  • Radish
  • Celery
  • Brussels Sprouts
  • Cabbage
  • Pumpkin
  • Spinach
  • Kale

As you’ll see in the below recipe, I have my 4 core ingredients and then it’s up to you whether you’d like to use butter or coconut oil for frying up your vegetables. And, then add salt, pepper and seasoning to taste.

You can turn this soup into a low carb and high fat soup by stirring cream or sour cream through the finished soup. You could also mix through some grated cheese, parmesan or even crumble over some feta for added flavour.

Easy Low Carb Vegetable Soup Recipe

Low Carb Vegetable Soup Recipe

  • 1 Leek, chopped
  • 1 Head of Broccoli, chopped
  • 2 Zucchini, chopped
  • 2 Stock Cubes
  • Butter or Coconut Oil, for frying
  • Salt & Pepper, to taste
  1. Heat butter or coconut oil over medium heat in a saucepan.
  2. Once melted, add the chopped leek and cook until softened.
  3. Add the chopped broccoli and zucchini.
  4. Season with salt, pepper or your seasoning of choice.
  5. Cook until starting to soften and brown.
  6. Add the stock cubes and pour over water to cover.
  7. Bring up the boil and then lower the heat to simmer for 15 to 20 minutes or until the vegetables are softened and cooked to your liking.
  8. Enjoy your soup as is or blend with hand blender or cool and blend in a regular blender.
  9. Serve as is or with cream, sour cream or your cheese of choice mixed through.

This simple soup is creamy and flavourful, despite having only a few ingredients. The vegetables work so well together, complementing and bringing out the best in each other that it’s sure to become your favourite soup too.

Easy Low Carb Vegetable Soup with just 4 Keto Diet friendly ingredients.

Ingredients

  • 1 Leek, chopped
  • 1 Head of Broccoli, chopped
  • 2 Zucchini, chopped
  • 2 Stock Cubes
  • Butter or Coconut Oil, for frying
  • Salt & Pepper, to taste

Instructions
