To me, veggies are best enjoyed in a rich and cheesy dish like this cabbage casserole recipe. You don’t need many ingredients and you can adapt the veggies to your tastes. 

 

The mixture of the feta and cheese brings tons of flavour to neutral flavoured vegetables like cabbage and mushrooms.

How To Make Cabbage & Mushroom Casserole

To make the low carb comfort food casserole, simply fry up the cabbage and mushrooms in plenty of butter, salt and any other seasoning you like, until softened.

While the vegetables are softening, whisk together the eggs, feta and grated cheese to create a flavourful sauce.

Then, it’s just a matter of combining the vegetables and sauce together, in the baking dish and finally topping with more grated cheese to achieve a crispy topping.

Bake for 25 to 30 minutes and then you’ll get to enjoy a cheesy veggie dish that the perfect Meat Free Monday dinner.

Keto Mushroom & Cabbage Casserole Recipe

  • Cabbage, chopped
  • Mushrooms, chopped 
  • 2 Eggs
  • 100g/3.5 ounces Feta
  • 1 Cup Grated Cheese 
  • Butter or Coconut Oil, for cooking
  • Salt & Pepper, to taste 
  1. Preheat the oven to 180C/350F and get out a baking dish. 
  2. In a frying pan, melt butter and then add the chopped cabbage, mushrooms, salt and pepper, to taste. 
  3. Cook until the vegetables have softened.
  4. Whisk together the eggs, feta and half of the grated cheese. 
  5. Once the vegetables have softened, move them to the prepared baking dish.
  6. Mix through the egg and cheese sauce until well combined. 
  7. Top with the other half of the cheese, or more to cover. 
  8. Place into the preheated oven for 25 to 30 minutes, or until the cheese is golden and crispy to your liking.
