This cheesy chicken bake makes an easy dinner that the whole family will adore – and it’s so quick to make that you can prepare is any night of the week. 

You can follow the recipe that has only 3 simple ingredients or you can feel free to add in extra ingredients depending on your own personal tastes, dietary requirements and budget. 

Best of all, the easy recipe only requires mere minutes of prep, which is perfect for a busy night and can be enjoyed just as it is or with your favorite sides that you usually enjoy with family dinners, such as a leafy salad, white rice, brown rice, instant rice or cauliflower rice or your pasta or low carb alternative of choice.

Here are the 3 ingredients that you’ll need to create the delicious comfort food meal that’s perfect for a weeknight dinner:

Chicken –  I’ve used chicken drumsticks because the whole family adores a chicken casserole recipe with drumsticks, but you can feel free to swap for chicken thighs or even boneless skinless chicken breasts, if you’s prefer. If you’d prefer to use a rotisserie chicken that’s already cooked, then simply combine the ingredients together and cook until the chicken bake has heated through and you have the perfect, golden, cheesy topping. 

Pasta Sauce – if you’re making the easy casserole as a low carb meal, then just use the lowest carb pasta sauce that you can find to help keep the total carbohydrate count of the dish as low as possible. I like to use a flavored pasta sauce so that I don’t have to add in any extra seasoning to the perfect meal. 

Shredded Cheese – you can include mozzarella cheese in the cheesy sauce, as I have done or swap for grated cheddar cheese, parmesan cheese, Monterey Jack or use a few different kinds of cheese.

​Here are more ideas for ingredients that you could add to the cheesy comfort food meal: 

Seasoning – there are so many options for seasoning that you could add to flavor the casserole to your tastes. Choose from simply adding in sea salt and black pepper or your choice from onion powder, garlic powder or Italian seasoning.

Creamy Ingredients – to make a creamy sauce for the cheesy chicken bake, you could mix any of the following creamy ingredients in with the pasta sauce – cream of chicken soup, cream of mushroom soup, cream cheese, heavy cream or sour cream. You could also flavor the cheese sauce by adding chicken broth or stock into the mixture. 

Crunchy Topping – you can feel free to add an extra ingredient for the final 10-15 minutes of cooking time for a crunchy topping to your easy chicken casserole. Choose from sprinkling over crispy bread crumbs, chopped nuts or crumbled chips, crackers, cereal or a low carb alternative.  

Vegetables – add in vegetables to extra flavor and nutrition. Choose from fresh garlic, fresh broccoli florets, cauliflower, green beans, chopped red peppers or onion.

Cheesy Chicken Bake Recipe

  • 1kg-2kg/2.2lbs-4.4lbs Chicken Drumsticks
  • 1/2 to 1 Jar of Pasta Sauce
  • 1/2 to 1 Cup Cheese
  1. Heat oven to 180C/350F and grease a casserole dish with olive oil or cooking spray.
  2. Place the chicken drumsticks into the prepared baking dish and pour over the pasta sauce.
  3. Toss to combine, adding in any extra ingredients to taste.
  4. Place into the preheated oven for 30 minutes cooking time.
  5. Remove from the oven, turn the chicken drumsticks over then sprinkle the shredded cheese over the top of the casserole.
  6. Place back into the oven for a final 30 to 45 minutes baking time, or until cooked through and golden brown on top.
  7. Remove from the oven and serve as is, or with your side dish of choice, such as a fresh salad, storing any leftover cooked chicken that have cooled to room temperature in an airtight container to enjoy within a couple of days.
